Small individual meal ideas

Unique situation for me. Handicap wife. Doesn’t eat alot at meals. Has all three every day. Hard to get her to eat leftovers for the most part. Example—1 can of Blue Runner red beans with a little sausage and spices added would be 3 meals for her. Much less if I cooked a full blown crock pot version that I love. I love leftovers because I have cooked it and I know its good and quick at night for dinner. See my dilemma right. She has limited variety of what she really like. Usually not healthy. Baked sweet potato is a go too. Mexican too. I struggle with other options. Help!!

Cook and freeze individual portions? Soups, red beans, spaghetti sauce, etc

Storage Containers

These are really good if you fill them to where there’s little air. The kids are air right, so food will last several months.

Give us a list of what she will or likes to eat. I would bet you get a lot of help here.

I don’t want to get into your personal business about her disability, but does it have any impact on her dietary requirements or restrictions?

Without knowing anything I would say eggs for breakfast. Sandwich for lunch. And whatever protein she likes at dinner.

Mini sausage biscuits? I’m not sure how small her meals are, but you could do 1 at a time if necessary.

If you don’t have one, and you have the means, get a small toaster oven/air fryer. I’ve made frozen biscuits and pancakes for breakfast, chicken and veggies for lunch and/or dinner. Takes a fraction of the time to cook and you can cook a single meal much easier and without heating up your larger oven.

She is a picky eater to make things more difficult. Some things that I used to fix for her she doesn’t like anymore. Hates eggs so that elimanates a quick protein. No milk. Likes coffee, cranberry juice and only 1 flavor of these Ice drinks that are in the stores. I do mexican about once or twice a week. Do breakfast for dinner about once a week. Likes biscuits and pancakes. Will add more later. Thanks everyone

I`m thinking of some fast things that are easy on you.

1.Baked chicken or chicken tenders in a skillet with a mac & cheese cup. They sell the mac and cheese in 4 pack cups if you didn`t know.

2.Use the same pack of chicken and make chicken soft tacos or a quesadilla.

3.An old fashioned grilled cheese in a skillet.

4.Gordon`s frozen fish filets separate or on a hamburger bun for a fish sandwich with some fries in oven or air fryer.

Make something that you can change up for leftovers.

Example: buy a rotisserie chicken and serve with a small potato or salad. Take leftover chicken and add seasoning to make chicken tacos the second night. Then boil the carcass and make chicken soup the third night.

Chicken and rice

Salt and sear chicken leg quarter, remove, add aromatics/seasonings to chicken.

Add rice and chicken broth to oven safe pan and bring to a boil. Put chicken back in and throw it all in the oven at 350. Cook until the broth has evaporated out.

Takes a while to cook about 30-40 minutes, but takes minimal effort.

I always have the makings for little tortilla pizzas on hand. One of my favorite quick meals.

Also this Jaques Pepin recipe is in my regular rotation. So easy and delicious.

When I use those, you have to leave some space at the top since the food will expand upon freezing. I cover the top of the food with plastic wrap and press out all the air. Basically, it is akin to vacuum sealing. Food lasts a lot longer in my experience.

Street taco wraps are very versatile. Not only for Tex-Mex but other things. And are quick and easy with a little prep.

Stuff with any protein:
chicken - Rotisserie, fried, baked
Beef - Meatballs, steak, roast beef
Ham - Deli, baked, smoked, salad
Shrimp - boiled, fried, sautéed
Fish - fried, broiled, baked....

Add cheese:
American
Swiss
Mozzarella
Cheddar


And vegies:
onions
Peppers
lettuce
coleslaw
Tomatoes....

Should be enough varieties out there to keep her interested.

She is home during the day at both breakfast and lunch too. She does PB&J sandwiches on the regular. I make individual personal pizzas with the small pre made crust. She eats hot dogs at lunch some as well. I do smash burgers on my griddle about every other weekend

If she likes Mexican, try making Pati Jinich's Baked Egg Casserole. You can make individual, single serve casseroles in ramekins and it is quick to throw together. You can also make it as spicy as you like:

Baked Egg Casserole

It includes a recipe for the ranchera salsa, which you can use in other things too. I have made it with store-bought salsa, but I like Pati's recipe.

Also, check out Pati's and other recipes for birria and chilorio tacos. You can cook the beef or pork, divide it into portions and freeze. When you want tacos, just thaw out a portion, chop up some onions and cilantro, warm up the tortillas and you have fresh tacos.

Does she not like leftovers because she doesn’t like reheated food or because she doesn’t like to eat the same meal at close intervals? If the latter, you could always freeze a few servings of every meal you eat and heat it up a week or two later for both of you.

It sounds like her tastes have reverted back to be similar to childhood. My MIL did that after major heart surgery, so we treat her similar to a child. Keep plenty of frozen chicken strips/nuggets, burger patties, Mac-n-cheese, lunchables, etc on hand. If she doesn’t like what we’re cooking, she has other choices.

To make her meals heather, maybe add some berries to the pancakes. Or can some apple sauce and/or sugar be added to some of the dishes?
