I mean no disrespect here, but I’ve got a very picky toddler and some ideas for you.
You have an air fryer? Sweet potato fries are pretty quick. We also do store bought chicken nuggets breaded with a cauliflower purée.
Dice apples/peaches, toss in olive oil and cinnamon, add a couple TBSP apple juice and bake at 400 for 45 mins or so.
Annie’s frozen waffles with apple butter.
Grilled ham/Turkey and cheese sandwich with spinach.
Quesadillas are pretty easy and can take many forms - use leftover brisket, whatever.
Seems like your situation calls, not so much for meal prep, as it does recipe prep - what can you prep in bulk for quick oven meals? - ground Turkey salsa verde enchiladas, lasagna, things like that. Marie Calendars Turkey pot pies.
Could be she’s tired of a meal, could be she’s frustrated with struggling with certain foods. I’m in senior living and have had much success with picture menus - snap a pic of plated meals you make, save them, create something she can choose from - control and choice often half the battle.

I recently tried a couple of the starkist tuna creations and chicken creations (packets) different flavors- bbq, chicken salad lemon pepper etc. Make a sandwich, put on a salad etc - prettttty good stuff

Have you checked into Meals on Wheels? I think she may be entitled due to her disability.
