I've got to figure out beef ribs. I've done the big flintstones and they're alright. But Mueller does a bigass short rib that look incredible. I need some of those

Did a nice slab of short ribs two weeks ago. Pull apart tender. Fantastic. Like brisket point on a bone.

Never done a slab before, but I love beef ribs. I usually get a couple of packs from the beef guy at the Farmer’s Market

Did a slab of beef ribs two weeks ago. They were excellent. “Brisket on a stick” is a fitting description.

I love beef ribs, but they're expensive for the amount of meat the yield. I'll take brisket

Now that I have found proper beef ribs, my answer is ribs. If I have to use the cryo packed from a grocery store, then brisket.

What you mean by proper beef ribs? You ordering them from somewhere?

Local butcher has them. The difference is the amount of meat above the ribs. The grocery ones have so little.

You summed it up perfectly for me. If the ribs are big dino plate ribs then I'll have that over brisket.

Dino ribs are superior in my opinion. Quicker cook, and I would argue easier than brisket. Price is the big factor. It's hard to beat a 3 bone rib plate on the smoker.
