This guy taught me to cook Chinese, maybe 40 years ago, on Texas Public TV. I would come home every day and watch him for 30 minutes at lunch, then zip back to work. As Head Honcho QC/QA guy in the Medical Device company where I worked (surgical face masks and straight jackets), I could do that. Of course, I came in at 7:30 and stayed until 7:00 or 8:00 every night

No. The Accent is real. I met him twice at the National Restaurant Show in Chicago (1993 and 1994). What you see is what he is. Actually a really nice guy. He was demo cooking in the booth across from our booth and we talked some every day for all three days, both years. Our booth had really thick carpeting, so when things were slack, he would come across and we would talk. The second year, he actually remembered me, or at least I was the QC guy in the Groen booth that had really thick carpeting.

No, for 10 years, I was Corporate Director of quality for Groen Division of Dover Corporation. Groen made steam jacketed kettles, steamers, steam convection ovens, braising pans, non-magnetic kettles for mine sweepers and submarines, large volume industrial jacketed tanks, specialty pharmaceutical, pressure/vacuum vessels. We made steam jacketed coffee pots that would make 1000 cups of coffee at a time, the processing machines that made crackerjacks and fiddlefaddle, and the copper cooking and coating kettles at Brach's candy company.

Since you learned how to cook Chinese what is your go to for fried rice. I tried 2 weeks ago and it needs help. I watched a few videos and I have a plan but, would be interested in your thoughts.

Groen steam jacketed kettles were the tits back in the day. I didn’t work in the kitchens but knew the guys that did push out volumes out of those lovely beasts

cook rice day before, or hours, and let"dry" in fridge
add a touch of oyster or fish sauce (tsp-tbl) to soy
