Can someone explain this to me? I tried it last night and it didn't go so well. I am using yogurt butter, could that be the problem? TIA.

I'm sure yogurt butter is an issue, but I've tried regular butter before and the butter burned before the steak was seared.

Add real butter to the pan in the final minute of the prep and baste the steak with the browned butter.

Use clarified butter/ghee, or turn the heat down.

This is like asking if putting AA batteries in your gas tank is going to make your can run better.

Is it an electric car?
Silly question, right? Electric cars don't have gas tanks.

yes, use clarified butter. Or use a fat w/a higher smoke point for the sear, then melt a pat of butter over the steak just before serving. Something like grapeseed or avocado oil will work.

That picture has me hungry. I always put a big piece of butter on top of my steak about a minute before I pull it off the grill. Never seared with butter though.
