rice and eggs is not like fried rice. I think certain people make it differently perhaps.
beating a few eggs and throwing in leftover rice while eggs are still runny and cooking in skillet together is not fried rice.

My dad grew up poor so they ate rice at every meal. I eat it every Saturday that I have leftover rice in the fridge.

It's down to the preparation. If you fry leftover rice in a skillet or wok and crack and egg and scramble the mixture it is, in essence, fried rice.
The way my mother prepared it was to heat the rice in a skillet with butter, then remove and add choppped, soft boiled eggs (with the yolk gooey but not runny) so as to not cook the softer portion of the yolk. The yolk never completely fried so much different texture. Same can be acheived with adding fried over medium to fried rice and fold in. Not the same as fried rice-similar but there is a subtle difference.

I mix a cup of brown rice, with 10 oz of cooked egg whites in olive oil, with a half cup of black beans, with a 1/4 cup of bold black bean and corn salsa
that with a spinach and carrot salad at night is the tits
to be clear this is something I made up, haven't heard of anyone doing it before. did it to provide slow digesting proteins before I go to bed

I have eaten scrambled eggs with leftover yellow rice, too. It is delicious. It is not as good as scrambled eggs with leftover jambalaya!

I fry a pack of bacon crisp. Leave some of the grease then add the left over rice and fry it a bit. I then break 4 eggs into the rice and mix it together well with a generous amount of black pepper. Then I break up the bacon that I fried earlier and add to the rice along with some fresh green onion.

Don't think I've ever had eggs and rice till last night. Came in from the ballpark after a thrashing the Mohouse allstars and decided to scramble some eggs. While in the fridge I saw some leftover rice, remember the tread and said what the hell. This morning I added a little more to it.
Chopped up some leftover pork loin.
Whipped up 3 eggs, " and added them with a pile of rice, the pork and some green onions.
Added a bunch of cheddar cheese, let it all come together and ate it of a wheat tortilla.
Then had 3 more. It was killer

Have been doing this for 40 years. Butter in the pan, then eggs, then leftover rice. Then Hot Sauce. Easy, fast.

All my life.Just add leftover rice to the eggs, scramble, cook in black skillet. One morning my Redneck Brother-in-law was invited to go hunting with my Daddy and me. We asked him if he was hungry. He said yes but when he saw the eggs and rice he quickly changed his mind. He never knew what he was missing.
