Is he including the water inside the package? Processed foods contain water which may leak out into the package. You weigh 16oz of fish, pack it, and the vacuum will pull water out of the product. We need to see how his package weighs before opening. It should be over. We then need to see him open the package and weigh the product with the water in the package.

On the matter of the integrity or accuracy of my Walmart scale, I have concluded based on multiple experiments today that the scale is quite accurate, down to the tenth of an ounce. This finding leaves me to conclude that my initial findings were correct. All must be careful purchasing pre-packaged seafood from Sam's. Unfortunately salmon, snow crab, and king crab do not swim in Gulf Coast waters to my knowledge, so I am unable to purchase a locally caught species.
To the friend who asked why I assumed I would get 48 ounces of meat from the five pound snow crab package: the distributor's box has nutritional information supplement on the posterior of the box. It says "Serving size 3 ounces of meat...Approximately 16 servings." Sam's snow crab box and label. While I understand we are dealing with seafood, and yields can vary, the difference between 48 ounces, which is suggested on the box, and 22 ounces, which was the actual yield is beyond reasonable.
Attached are photos of three different, and delightful lentils beans I purchased at Central Market in Houston last week. The scale is very accurate and makes me very unhappy with Sam's Club, in whom I have placed my trust as a member for decades.
Product........CM weight.....TL scale weight
Beluga lentil...5.52oz..........5.6oz
Red lentil.......10.56oz........10.6oz
Faia lentil........9.6oz............9.6oz
As for water weights, there is no water left in the salmon package. The snow crab, as mentioned above, is supposed to yield 48 ounces of meat. The king crab weight is so far off that they are selling customers more water than actual crab in shell. At $30 a pound, that water weight is pricey.
Apparently much of the king crab in America come from Russia, and were purchased in a flurry and stored right before our ban on Russian commercial fisheries took place. If the ban continues and the frozen Russian crab run out, king crab will become even more expensive.

As you can see, I am weighing my options. I still must doubt myself in these matters. It would be most helpful if a fellow grocery scientist could verify my findings by perhaps weighing a random package of salmon and snow crab (and weighing the snow crab meat after the snow crab is cleaned).

Thank you for your investigation. I am as aggravated as you at the obvious false labeling of product weight. We as consumers are paying a very high price for this. If one were paying $29 a pound for prime ribeye steak and only got 10 ounces, one would be pissed-water weight or not. #Gottobehonest.

I was willing to forgive Sam’s for the snow crab weight last month. I hoped it was a one time incident and I forgave them. I gave them a second chance with the king crab a week later and Sam’s failed me yet again. My original post today alluded to my previous posts about incorrect weight: “It is well documented how Sam's includes water and packaging weight on snow and king crabs when pricing the items.”
Today, the salmon was the last straw. It is the pattern of mislabeled weights, the system, that is problematic and the point of the thread. How can I ever trust Sam’s again? How can anyone?

Report your findings to the FDA and keep us posted. You may be able to buy Mother a Lamborghini with your class action lawsuit.

See if mother will allow you to use her Amazon account to purchase these calibration weights from Amazon. but please be careful with internet commerce. If you want to have Uncle file a class action lawsuit against them I would like to be included. I bought crab meat from there once.

Thanks again for another informative post. I may be in the minority here, but I enjoy your threads. I hope your thirst for justice from Sam's Club's deceitful seafood practices, is quenched.
Our local Chick-fil-a has nearly driven me to bring a scale. Their large fry is seldom filled adequately and nearly has the same amount of fries as the medium size. So far, I've just yelled at the sky as I drive away from the drive-thru, but maybe you've inspired me to do my own exposé and bring down the drive-thru mendacity.

But common sense would tell you that not every crab is the same. Some have a lot more meat than others. Even when two crabs appear the same size their meat output differs. They can’t possibly know exactly how much meat is in each leg. It’s just their best guess. You got some skinny ones.
