Secret weapon for the lazy roux makers. While I don't think it tastes that bad, it is what makes restaurant gumbo not grandma's gumbo in my opinion. I would also guess that if you can't taste it or it doesn't bother you, your grandma used it too, sneakily.

If ever in Alexandria the gumbo at Pops seafood is as close to good homemade as I’ve ever had. Sausage could use an improvement, but everything else is damn near perfect.

My mom doesn’t have dementia, but her cooking has fallen off in recent years as well. As we age, your sense of taste tends to fail…and it is damn hard to cook well if you can’t taste anything.

I'd bet K-Paul's gumbo was better than your mom's, and just about anyone else's.
I like the gumbos at Dooky Chase and Liuzza's by the Track.
Mandina's is usually good, too.
I don't like Commander's Palace as much as most, but their soups are always very good.
I like a dark gumbo, but the ya-ya at Mr. B's tastes burned to me.
Herbsaint's serves an enjoyable bowl, but IMO tastes more like a thick beef stew than gumbo. Elevated Dinty Moore.

I'm not from Louisiana, but the best I've had was from the Napoleon House in New Orleans. One spoon made my entire hangover go away after the LSU/Florida game last season

No offense intended. The Gumbo looked like crude oil and tasted like camp fire wood.
The BBQ shrimp, however, bib-worthy and bibilicious! Been back many times. But skipped the Gumbo.

Damn I had this a month ago and it tasted like they poured a gallon jug into a bowl and added some liquid smoke. Solid 5/10.

The C&S gumbo is definitely one of the better gumbos in the Houston area, however:
1- He uses solely cubed white chicken. Dark meat chicken would help give it an even better flavor.
2- While I don’t put okra in my gumbos, I don’t mind it. However, wish he would cook it down more. It’s in crunchy chunks.
Tad’s in Katy is probably the best C&S gumbo I’ve had in the Houston area, while either Bayou City Pasta or Eugene’s is my favorite in the area for seafood gumbo. Eugene’s would be the runaway favorite if they would season it a bit more. However, the roux and stock has been on point the couple times I’ve tried it.

Agree with Sparh’s being on that list.
I’d lobby to add the C&S and shrimp gumbos from Chris’s Poboys.
Peto’s in Roanoke, at Exit 59 on I-10, does a really good C&S gumbo. Their smoked sausage gives it a really satisfying flavor that is perfect for lunch on a cold, rainy winter day.

I love Prejeans! I get it every time I go to Jazz Fest. It’s the only one I’ve had the is almost as good as my Mom’s
