Red beans?

I had a conversation with a few friends today, and I was in the minority.

I make red beans in the crock pot. If I have left over grilled chicken or pork chops in the fridge, I throw it in there along with the sausage. I got some serious backlash.

“Red beans should only have sausage and maybe Tasso.”

I don’t understand this adhering to “tradition” to the point of not having good stuff. What’s the F&D’s opinion?

I wouldn't put chicken in red beans honestly. There are a lot of things you can do with leftover chicken (chicken salad with pecans and grapes and some green onion) but red beans to me is a no no.

I have never put chicken in it but I have cooked chicken normally and had some leftover beans and had it on the side or put them on top.

I only put sausage and pickled pork/ham hock

I’ve done pork chops many a time. Never done chicken, but it wouldn’t ruin the beans.

Pickled pork
Ham
Sausage
Tasso
Ham hocks
Andouille

Add smoked turkey necks to that list along with a stick of butter at the end for richness and a nice sheen as well as Tom Fitzmorris’ food processed 8 pack of Oscar Mayer hot dogs for the Popeyes flavor.

Turkey breast.
Chicken
Filet steak

Back in '95, my MawMaw made red beans one Monday and realized after she started cooking that she had no appropriate meat. So she used breakfast sausages - the little links.

It was magical.

She never did it again, and I never tried to replicate it. We just let ot be, as one of those all time great performances.

RIP MawMaw.

First off I hardly ever cook red beans I prefer pintos. In then I'll put left over pork from the weekend q sausage and the usual seasonings. Left over chicken goes in black eye peas left over grilled yard pimp is made for black eyes and makes a great black eye pea jambalaya. Left over ham and such goes in white beans and tasso goes in any of them i aint saying it's right its just how my family always done it.

This is what I would also say, but if you want MY opinion, I wouldnt want Chicken in there. But arguing preferance of how food is made is a waste of breath.

I am more of a smoked ham hock and smoked sausage person. But I have used smoked turkey necks and/or smoked pig tails.
