I love my Cutco steak knives, but I tend to use other knives for food prep/chopping etc... For food prep, I'd buy individually and get knives that feel best to you.

Ive got several nice knives, but prefer my 7.5 inch Victorinox with plastic handle. I think it was $40.

Rada makes some awesome knives that are cheap AF. Don't feel bad about getting rid of them when they wear out.

Shun Classic knives can be had at decent prices. I would piece together your own "set." As a previous poster mentioned, I think a Victorinox Fibrox chef knife and boning knife should be in every kitchen arsenal. I like my Shun Classics just as much if not more than my Shun Premier knives.

Don’t buy a set. Find 2-3 knives you want and to fit your needs. Your money is better spent that way.
German steel for heavy lifting and Japanese steel for veges etc...
For the Japanese route... there are better than the traditional store bought brands out there.

And if you need a 4th, get a paring knife or a 6'' chef knife. Sometimes an 8'' or 9'' is just a little unwieldy for some reason. Also if you have a significant other or child who may be helping out having 2 good knives that can do anything (ie Chef or Santoku or Gyuto).

Forget sets.
Forget spending $600 on knives. Spend $600 on food to cook. Go to your local restaurant supply and get a 6" chef's knife, a paring knife, a boning knife, and a cleaver. Dexter. Will last forever. Learn to sharpen them properly.
It's a tool, not a decorative object. Nothing wrong with knives as art, but I'd rather have a deeply functional tool than a "pretty" piece of metal.

My Shun Classic 8 inch is my favorite knife
My mom is obsessed with the Fibrox knives I bought her 10 years ago. Her favorite broke last week so I had to scour the internet to find a replacement because it's discontinued. I probably spent 2 hours looking for a 20 dollar knife.

I'm not a believer in sets because not everyone makes the best of every kind of knife and you get overcharged. I take my view from chefs and restaurants and visit the supply store. I have never been let down yet.
I like Henkel, but Wustoff and Mac make great Chef's knives. I have a few Victorinox paring knives, carving knife and bread knife. Mac makes a great boning knife. My Sontoku is a Henkel and I round out the set with a small Wustoff Icon utility knife. Just as important as the knife is keeping it sharp. I bought a Chef’sChoice Trizor from Costco for $100 a while back and don't regret the expense. They're sold on Amazon, too.

I have Wustoff but am moving into a new house soon and want to place knife magnets on the wall. Shun looks so awesome that I'm thinking of making the switch, at least for the main staple knives.
I also really like Zwilling
