Anyone have a good marinade/grilling recipe for pork steaks? I picked up a family pack real cheap and trying not to mess them up.

Sous vide or instant pot
Any other way you risk drying out

Brown them over charcoal. Put them in an aluminum pan and pour a beer in the pan. Cover with foil and cook until they are fork tender. Have Wayne Toups playing in the background. That’s how they do it at the International Rice Festival

Best sauce around for pork or chicken.
I add some to my beans too, adds a nice taste to them.

Marinade (from a Cook's Illustrated recipe for flattened tenderloin steaks, but it works good here too)
lime zest plus 1/4 cup juice (2 limes)
4 garlic cloves, minced
4 teaspoons honey
2 teaspoons fish sauce
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup vegetable oil
Whisk all but the oil in a large bowl. Whisking constantly, slowly drizzle oil into the mixture until fully incorporated.
Put the marinade and steaks in a zip-lock bag for an hour or so at room temperature.
I grill them indirect on a Weber kettle, with the charcoal behind fire bricks, for about 3 hours. Flip now and then. May need to add coals after a bit, and you can put the meat direct at the end if it needs any more browning.
Some of the St. Louis area guys at Virtual Weber Bullet board have posted various recipes for pork steaks. They are apparently very popular in that region.

They are a big deal here.
I haven't done them in a while because the ole lady isn't a huge fan of the cut. But I used to cook them a lot because they're cheap and it let me practice making dry rubs. We got a new grill now so I think it will be on the menu for the summer.
None of the recipes I have are any better than what's already been mentioned in this thread. I do wish I had easier access to Jack Miller's BBQ sauce.

I like mine in a little Lawrys Pinapple Teriaki Marinade. Not long, about 10 minutes are so. Slap them on a hot grill for 3-4 minutes a side and eat.

Brown them lightly and then simmer them in a large batch of homemade red gravy, Nola Sicilian style till fork tender. Serve that over any type of pasta you’d like.

They make good rice and gravy or good on the grill. Bought some today on sale.

Seasonal and a little yellow mustard. Slather it on and let it sit overnight, grill it at about 400 until browned good. Remove, transfer to a pan, cover tightly with foil and stick them in an ice chest or the unheated oven for an hour or 2 to rest.
If you want bbq sauce on them, slather it on the last 10 minutes of cooking and lower the heat.
