This one works for me, it’s basically one from Americas Test Kitchen that I just started tweaking around with. So far I haven’t had to change much, the double batter gives them a good coat.

Forwarded from my recipe app that I have been using called ‘Paprika’ that is worth taking a look at if you want to start a good collection of recipes


Thin Cut Onion Rings


Party Food, Sides
Total Time: 1 hr 45 min | Servings: Yield 4 people

Ingredients:
4 cups buttermilk
4 cups all-purpose flour
½ cup cornstarch
2 tablespoons Cajun Seasoning Salt
2 tablespoons baking powder
2 teaspoons pepper
½ teaspoon table salt
2 large onions (1 pound each), peeled
3 quarts oil for frying


Serve with Onion Ring Sauce

Directions:
Make Onion Ring Sauce and set aside

PREP ONIONS:
1) Adjust oven rack to middle position and heat oven to 200 degrees.
2) In Large bowl, add buttermilk
3) In second large bowl, Combine: flour, cornstarch, Cajun Seasoning, baking powder, pepper, and salt and mix well.
4) Transfer flour mixture to double-bagged large paper shopping bag.
5) Slice onions crosswise into 1/4 inch-thick rounds. Dont use the smaller rings.
6)Separate onions into individual rings.
7) Toss one-third of onion rings in buttermilk to thoroughly coat.
8) Shake off excess buttermilk and transfer onion rings to flour mixture in bag.
9) Repeat steps 7 and 8 with remaining onion rings in 2 batches.
10) Roll top of bag to seal and shake vigorously to coat onion rings in flour mixture.
11) Remove onion rings from bag, shaking off excess flour mixture, and transfer to rimmed baking sheet.
12)Transfer one-third of onion rings back to buttermilk and toss to thoroughly coat.
13) Shake off excess buttermilk and transfer onion rings back to flour mixture in bag.
14) Repeat steps 12 and 13 with remaining onion rings in 2 batches.
15) Roll top of bag to seal and shake vigorously to coat onion rings in flour mixture.
16) Pour contents of bag onto sheet. Separate any onion rings that stick together.

FRY ONIONS:
1) Line second rimmed baking sheet with triple layer of paper towels.
2) Add oil to large Dutch oven until it measures about 2 inches deep and heat over medium-high heat to 375 degrees.
3) Add one-third of onion rings to hot oil and fry, without stirring, until breading is just set, 30 to 60 seconds.
4) Stir gently with tongs and continue to fry until dark golden brown, 3 to 5 minutes longer, flipping onion rings occasionally and separating any that stick together. Adjust burner, if necessary, to maintain oil temperature between 325 and 375 degrees. Transfer fried onion rings to paper towel-lined sheet and place in oven to keep warm.
5) Return oil to 375 degrees and repeat with remaining onion rings in 2 batches.

I agree, food is not as good as it once was, but still a nostalgia meal when we are back in town.

My 12 year old always asks to go for lunch when we are there, of course Grandma loves to meet us there.

I’ve moved quite a bit. Every time I move to a different state, I make it a point to register my vehicle and get a driver’s license in that state, you know, fulfill my personal legal obligations.

I have never waited longer than a few months to do this.

I can assure you that if I moved to another country I would damn well make sure that I did everything that I could do to comply to my new countries laws, and if I did not, I would accept whatever legal ramifications that would incur.

I have been working on a Jerk Chicken recipe since my honeymoon in Jamaica ten years ago and this is what I have so far.

Someone mentioned adding coconut oil to the paste, I am thinking my next test will be adding some coconut milk to the marinade.


Ingredients:
3 LBS Bone in Chicken Pieces
8 Green Onion Stalks
1/2 Cup Oil
1/2 Cup Soy Sauce
3 TBSP Molasses
4 TBSP Tiger Sauce
4 TBSP Cider Vinegar
6 TBSP Brown Sugar
2 Habanero Chili - Stemmed
15 Sprigs FRESH Thyme
12 Garlic Cloves - Peeled
2 1/2 TBSP Ground Allspice
1 1/2 TBSP Salt
2 tsp Onion powder
2 tsp Smoked Paprika
1 tsp Ground Cinnamon
1/2 tsp Ground Ginger
1 tsp Nutmeg
3 Limes - Cut into Wedges


Directions:
1) In Food Processor, Process: Green Onions, Oil, Soy Sauce, Tiger Sauce, Vinegar, Brown Sugar, Habanero, thyme, Garlic, Allspice, Salt, cinnamon, molasses, Nutmeg Onion Powder, Smoked Paprika and Ginger until smooth, scraping sides as needed, Squeeze juice of 2 limes- Cut the last lime into wedges for serving
2) Measure out 1/2 Cup of Marinade and place in fridge
3) Place leftover marinade and Chicken in Ziplock bag and place in fridge for 12-24 hours, turning every once in a while.
4) Light Grill for direct/indirect cooking.
5) Remove Chicken from bag and place on cooler side of the grill, with breasts (if using) farthest away from heat.
6) Close lid and cook until Breasts are at 160 degrees and thighs/drumsticks are at 175 Degrees (20-30 minutes) moving chicken to plate off heat as the hit temp.
7) Brush Skin side of Chicken with half of the reserved marinade and place chicken, skin side down on hotter side of the grill, brush with remaining marinade and cook until lightly charred (2-5 minutes) moving pieces around flareups.
8) Transfer Chicken to another, clean plate and let rest for 5 minutes.
9) Serve with Lime Wedges.



By the way, I have seen some people ask about recipe apps on here. I use Paprika and really like it.

Really good so far.

This stuff is amazing.

We have a paper wasp issue out where I live, the kids would never want to get in the pool because the wasps were always landing on the water and floating around drinking.

This stuff does something to the surface of the water and they cant float, they drown.

I have honestly killed 60+ of the damn things over a 5 day period.
I used twice the amount they call for and would turn off the pump for a few hours.

I am down to 1 super intelligent wasp that never lands, he just does drive by watering,

I don’t post often, but when I do, I just want to say frick off Commie...

Unfortunately, no not that one.

This was probably 20 years ago.

I was thinking Orson Scott Card, but I can’t seem to find anything like that in his works.

Lol, every so often, I do a google search for them, but so far have not been able to find them.

I want to say each book was named after the planet his clone was imprisoned on.
