Some of you are making this more complicated than is has to be. It’s a damn pork steak.
Season how you want at least 4-5 hours before and throw in the fridge. Light the Ole Smokey. Throw on the grate till it looks done. Whatever sauce you want is optional.
Enjoy.

I cooked some on the Blackstone griddle a week or so ago. I went pretty basic and used Allegro marinade. They came out pretty damn good.

I can only offer I once had an apple-wood smoked pork "ribeye" that had been glazed with some type of raspberry sauce.
It was served with a sweet potato/apple compote and black eyed peas with cornbread.
It was a hole in the wall joint in SW Virginia that a local bragged about to me and he was spot on, simple yet delightful.

Yep. I found a recipe last summer for St. Louis style pork steaks. Cooked some for the LSU-Miami game. You hit them with pepper, salt and granulated garlic, sear them on the grill, then put them in a disposable aluminum pan with a mixture that’s half beer, half barbecue sauce that kind of covers the steaks. Let them cook for a couple hours. They turned out great. Need to cook that again.
