I used to feel that way about brisket until I had some legit TX BBQ... most of the crap served around LA sucks.

Find it makes for a better overall brisket and allows not to get overloaded with leftovers of marginal quality.

Brisket was $2.77lb in Frisco, TX last week. Obviously up 30-40% from a year or so ago but still cheap enough to not eat a worse cut.

Last time I was in Costco they were back down to $3.99 lb for prime brisket. Price fluctuated between $3.20-$3.79 for years before it hit $5-$6-$7 a lb so I hope things are getting back to normal on the brisket front.

I've done this before and it's good. It's not brisket, but it's good. Works well in tacos, but I think that it's a better use of a roast to cook it in a traditional manner or use it to make birria tacos or quesadillas.

This was a "Beef Shoulder Roast" that was on sale at Winn Dixie. It is a cut close/similar to the chuck roast. It is not quite as good as a chuck roast, but that is why it's cheap. This made some great sandwiches and quesadillas.

I don't see where all the hate for smoking chuck roasts is coming from. Maybe it doesn't taste exactly like a brisket, but it satisfies a smoked beef craving and its quick/cheap.

This was all I was looking for, along with something the wife and daughter would eat. They won’t do beef ribs, and I’ve done Tri-tip a bunch so was looking for something different. But now our plans for tomorrow have changed and we are out of town next weekend, so it’ll have to wait for another time.

I tried to do Poor man brisket once and it took on too much smoke and some of it dried out. I think its because the cuts are across the grain and a little uneven.

Costco had prime packers stacked almost shoulder high for 3.99 earlier today, the chuck was closer to $5. If I have chuck I'll stick with debris, beef stew, or burgers.

Did this over the weekend and decided I will be doing these instead of briskets going forward, unless I’m smoking for a big crowd. It wasn’t as good as brisket, but close enough and way less time consuming and used considerably less fuel. Family and I devoured it last night.

Smoked a chuck roast yesterday because of this thread. It was on the pit at about 225-250 for 8 hours. I wrapped it when it was about 160F and had a nice bark. I pulled it at around 198F.

Overall, it came out excellent. Wasn't dry. It's a nice alternative to brisket...it sucks that you don't have a fat cap to get a consistent level of fat in each piece. Also, there were a few pieces where the fat was in the middle of the piece and didn't render well.

Mine took about 5 hours, but I wrapped when the bark was formed at around 170. Pulled it at 195.

I also had that piece of fat right in the middle that didn’t fully render.

If you have a costco near you you can get prime brisket for 3.99 lb. I bought one a few weeks ago for $36. It was a small packer but turned out really good.

I've done poor man's burnt ends with roast. Was good, but brisket burnt ends it was not.

I never went out shopping for briskets. My main grocery store is Publix and they rarely have have full briskets, just flats, and they want around $40 for them. Never looked at the per pound price.

The $100+ ones I saw were at the local Piggly Wiggly but they source them from some fancy butcher. Snake River Farms or something like that. The one I saw in the case was huge. I saw the price and didn’t inspect further before putting it down.

I’m sure I can find reasonable priced ones around town, but the other issue is even a smaller one is too much meat for me and my family, and I’m the only one that really eats leftovers, so good chance some of the at meat goes to waste.
