Dill is good with tuna or salmon. I use dill weed in my Tuna Pot Pies.

I've never had a pimento cheese sandwich. Might have to make one this weekend. What else do you put on it (tomato, lettuce, etc.)? Do you grill it like a grilled cheese?

the wife makes killer pimento cheese. Traditional recipe but she adds finely chopped jalapenos as well. They make all the difference.

perfect, I use the stand mixer to bring it together (maybe add a little water or sour cream to loosen it up) , put it on fresh white bread and a glass of milk makes the perfect summer lunch

and make sure you grate the cheese yourself, the store bought pre-shredded stuff just does not work

Try this...best veggie dip ever (from my grandma)

1 CUP SOUR CREAM
1 CUP MAYO (not miracle whip)
1 TABLESPOON PARSLEY FLAKES
1 TABLESPOON BEAUMONDE SEASONING
1 TEASPOON DILL WEED
1 TABLESPOON MINCED DRY ONIONS OR ONION POWDER

MIX AND REFRIGERATE

THIS MIXTURE IS USUALLY DOUBLED

Never use pre-shredded (bag) cheese. Use NY sharp cheddar block, some finely diced jalapenos, half stick of room temp cream cheese, cayenne, and garlic powder.

I'm surprised one of the baws from South Carolina hasn't chimed in with a recipe.

There's pimento cheese on damn near everything down here.

I usually add some Adobo sauce from a can of chipotle peppers. Gives it a nice kick and subtle smoke flavor.

Yes Rat - it is very good with those too. I'm certain I have forgotten other dishes I like with dill.

I like to use the fleshier roasted red peppers (usually Italian brands like Mezzetti's, etc) rather than the little pimento peppers. Adding few drops of worcestershire (or fish sauce) gives it a little lift.

My grandma used the hand-cranked meat grinder--it yielded a particularly nice texture. I'm too lazy for that--I shred the cheese and coarsely chop the peppers, then mix. The cheese mushes up better if it's room temp rather than ice cold.
