Pimento cheese secrets

Who wants to divulge their secrets and tips?

I got nothing. Made my first batch and realized I like more garlic powder and cayenne pepper than most recipes call for.

Thinking about sneaking some rice wine vinegar next time.

Costco jalapeño PC. I know that does not help. Also, one of the very few things I’ll eat that I know has mayo in it.

Try different cheeses like smoked Gouda, or Trader Joe’s Monterey Jack. Some people use a tiny bit of mustard powder for a little zing. If you want to have a heart attack, use bacon grease instead of mayo and put it on a burger.

I make my mother’s-whom almost always had in the fridge. Basic. Shredded hoop cheese, jarred pimentos drained, salt, pepper, touch of cayenne and Blue Plate. That’s it.

My wife makes it with a block of white American that she shreds.

The Palmetto Cheese at Sam’s is a good store bought.

Never heard or seen an acid in it.

I do like the smoked Gouda from Whole Foods with walnuts. Different.

The gouda sounds pretty good. Maybe a brie too.

Thought with the vinegar was associating it with mayo. Not a crazy amount like bbq sauce, but a little touch to match the sharp tastes.

I had the Callie's brand while in North Carolina and it was the best I have ever tasted. They include anchovies in their ingredients. Maybe this is the secret.

All I can offer is the wife's (MHNBPF) pimento. She uses sharp cheddar, pimento, black pepper and mayo. It I my favorite among all I have ever tasted.

We had a friend (RIP old Friend) who added Rotel to his pimento. Was special on a dip scoop shaped frito chip.

I can't speak for the bacon grease, but pimento cheese on a burger is a delicious combo.

This is what spawned my interest. Made my first batch to top a sirloin burger tonight.

Went to heavy on cream cheese and to thin of a cheese shred.

I appreciate the suggestion, for others this may be a revelation.

However, if dill ever crosses the threshold of my home I will burn the home to the ground and bleach the ashes before burning them further.

I always chop a few homemade sweet pickle slices and add to the mix. If I'm out of pickles, I'll sub some Heinz sweet relish. I also use a lot of black pepper in mine.

This is funny to me personally because I love dill pickles, but I have not found anything else that involves dill that is even mildly tolerable. The spice by itself is evil in my sight.

Try some dill rice with lamb and the au jus. excellent.

And you should plant some in the yard. Black Swallowtail butterflies love it. It is their caterpillar stage's preferred food.
