I like it sort of in between, not all batter but not real thick either. I think Crawfords on Staring has solid catfish.

prefer thicker pieces of fish myself. ive never experience "muddy tasting" catfish and i honestly think that's in peoples heads.
however, each to their own. eat how you like it.

It's definitely a thing. Have tasted it many times. Very rare with farm raised filets though in my experience.

There’s a little restaurant on the side of the road I believe it’s hwy 35 north of Angie Louisiana that serves small fried whole catfish that does a helluva business at lunchtime. I’ve only been there on Fridays when I was up that way hunting or visiting friends and we’d go there for lunch. Sometimes had to wait for there to be room to get in. Not a fancy place at all but good catfish. I want to say it was served buffet style.

whole catfish with just a dusting of cornmeal is GOD'S GIFT TO US
you shouldn't get your flavor from the breading.
ETA i can pick a damn catfish clean.
* nibble on the end of the crunchy tail
* eat side A, carefully pull the meat out from the bottom bones and get that little bit around the side fins and DONT FORGET to pull that little wedge of meat off the tail fin. thats good eatin'
* flip, eat side B, repeat as above
* with nail of your forefinger push the left and right meat out from top of bone (DELICIOUS!)
you should have nothing left but a pile of bones if you're doing it right and little risk of swallowing a bone if you're careful along the underside meat pockets.

Prefacing this with saying I grew up going to all kind of small town catfish houses throughout Mississippi and whole fried will always be my favorite due to nostalgia. With that being said, I tried Middendorf's a few years ago and damn I wish we could find some thin fried catfish around Birmingham.

I prefer the small strips to whole filets. I like a higher batter to fish ratio.
