Her problem with it is she thinks it doesnt look it done enough to be safe.. Not so much she doesnt like the taste.

She tried seared scallops? How about a skirt steak mid with chimichurri?
How about a nice sushi place’s raw apps from the bar? They’re often way more protein focused than rolls. Sauces that bring out natural flavors, searing when it’ll help...seafood is mostly better not overcooked.

I agree, but her issues being seafood and things not being cooked enough doesnt go over well with sushi. She's tried sushi... dont think she'll do it again.
She usually gets a spicy chicken dish when we go out for sushi. It's very good.
At least she loves spicy stuff!

She would love my MIL’s cooking. Over cooks everything and I mean everything.’
Examples: bakes fish 350F for 1 1/2 hrs you know, to make sure it’s done.
Chicken thighs 1 1/2 - 2 hrs. Reheats a Honey Baked Ham 1 hr plus, could resole shoes with it. You don’t want to know about her pork roast.
And my wife she doesn’t know how to cook. Good thing I enjoy cooking.

Why is it mostly white trash and country people who don’t like off the path food and eat well done meat with ketchup?

I am not going to label someone as 'trashy' because they are poor, I've seen some trashy wealthy people and some classy poor ones, but I was cooking steaks to order for a company picnic, the blue collar employees and family mostly said "I don't want to see any red when I cut it".

I couldn't marry someone who had a limited palate. I have friends and relatives who "don't eat onions", or "don't like sweet and savory tastes together". It's childish.
