Cocha in BR has a yellow curry that’s over coconut rice and fried kale. It’s damn good. By itself, kale is just okay. But it compliments dishes pretty well imo.

Kale? Really? I eat that shite several times a week.

It's just healthy turnip/collard greens as far as I'm concerned, and I cook it pretty much the same. Braise the shite out of it in favorite liquid/spices.

Not sure what vegetable it is in the salad from sushi restaurants, but it tastes like dirt. Not even sure it is a beet. Good crunch along with the carrots, cabbage, scallions...etc, but somehow it melds deliciously with that sweet vinegar dressing.

Anybody know what vegetable this is?

Canned beets -

However, Doris Metropolitan serves a large beetroot stuffed with a cheese and pistachio filling, with a goat cheese creme fraiche. Its DELICIOUS!!!

and he shrugged his shoulders.

BTW, I never ordered this salad. It was "lagniappe" after an order of ahi and unagi.
