After Austin got their stars, it was obvious that the standard isn't quite the same for getting a star as it has been in the past. I.e. The BBQ restaurants getting stars.
With that being said, I could see somewhere like Cochon getting one based on the "local" cuisine aspect. I haven't been to Cochon in many years as the service failed me a couple times in a row, so I can't speak to quality of food/service today, but it crossed my mind of somewhere that could based on the local criteria being used now.

Agree with what you are saying but Peche is a better candidate for that.

I thought about Peche as I was typing that and I agree. The only thing that gave me pause is that a decent portion of the menu isn't uniquely Louisiana. It's a seafood centric menu that utilizes open fire cooking that isn't inspired by local cooking techniques and often local seasoning. I'm a big fan of peche but don't know how Michelin is juding these local type restaurants for a star now.

My wife and I have dined at michelin rated and starred restaurants in 16 countries. The standard varies greatly in our opinions. The recent Florida and Texas expansions are the most glaring.
Michelin could be adjusting to increase audience with the younger crowd.
I think two Link restaurants could possibly get a one star. Butcher should be a Bib Gourmand. I eat there twice a month at least...it's great.

I went to a Michelin starred restaurant in Washington DC recently. The fact that the place had that was part of the reason for going. I wasn’t impressed at all and left thinking a Michelin star must not mean as much these days.

Hasn't it always? You had road side stops in England and France coupled with London restaurants being pretentious.
The spirit would be "worth going out the way" and using your tires. Not convinced it should be a blanket rules across all restaurants.

This has more to do with State tourism boards pitching big money to Michelin.
Like the poster above said, it's been a pretty varying experience depending where in the world you are. Everything from street vendors in Japan vs French wine snobs and anything in between.

Restaurant: Osteria Francescana then Eleven Madison (back when they served meat)
We have a kid now, so we really focus more on rated and Bib Gourmands, though some one stars have been great with the kid.

I've heard good things but haven't been.
I usually dont like ultra fancy places. The only over $250 meal I've ever had was Victoria and Alberts and it only got one star and i would have swore it was a three star.

Kikunoi in Kyoto was a 3 star
L'Effervesence in Tokyo was a 2 but now a 3
Sushi yasuda was rated or a one star, but I think he moved back to new york.
And a bunch of rated and bib Gourmands in Kyoto, Tokyo, and Osaka that I can't recall.
Honestly, every meal including the bullet train, convenience store, grocery store, market, etc was excellent for what it was. The $12 bluffin at a grocery store case was 5 times the portion and better than rated and starred sushi places in LA and NYC.
Japan makes you re-think your world view in many ways...right down to toilets, breakfast sushi, and "sex" districts.
