Simmer the cauliflower in chicken broth then drain, set aside. When you get to the part of your jambalaya where you deglaze the pot for that last time with the meat and veggies in there, add the cauliflower. Dont let that last bit a broth or whatever cook out. Its enough to get all the good flavor and color into the cauliflower. If you do like a traditional jambalaya and add abuncha broth/water and cook the cauliflower for a long time it turns to mush.

there are some low carb tortilla shells available at almost all grocery stores now that are not far off from flour. The smaller ones are like 3 net carbs, the medium is 4 I think. Do a lot of pulled pork tacos with them.

I love steamed broccoli and cauliflower with kraft cheese singles melted over top.

Zuchinni, squash, okra (not fried of course).

If you have an instapot look up low carb recipes with pork and chicken. I found a soy/ginger recipe thats great. I love soy sauce.

Mississippi crock pot roast

I love venison and pork sausage. Some nights when I am on keto (which is an ongoing struggle since I lost a good bit of weight in 2018) I'll just heat up sausage, slice some colby jack cheese and throw some hot sauce in a little bowl for dipping.

Fat head pizza dough can lead to a bunch of good stuff.

Italian sausage stuffed with mozzarella and baked in baking dish with a low carb marinara sauce under it.

Crawfish are keto. But you will retain a bit of water for the next day or so from all the salt most likely.

Cabbage steak melts- slice a cabbage into rounds (about 1/2" each), oil and roast until caramelized, then top with your favorite meat and shredded cheese. Back in the oven until the cheese is melted. We've done this with steak, chicken and even taco meat, served with sour cream/guac.

Same with zucchini boats. Hollow out a zucchini, bake for 10-15 minutes, top with taco meat and shredded cheese, back in the oven until cheese is bubbly.

I really like this casserole, too. Saute an onion in olive oil. While it's cooking, start steaming 2 bags cauli rice and 1 bag broccoli in the microwave, one at a time. Add veggies to the pot as they come out of the microwave. Once onion is clear, add 2 tubs of spreadable cream cheese- I like 1 onion/chive and 1 jalapeno. Add a jar or 2 of sliced mushrooms and about 1/2 cup of shredded cheese and stir to incorporate. Lastly, add shredded rotisserie chicken. Top with cheese and bake in casserole dish until bubbly or serve straight from the pot.

for breakfast I just boil a couple of soft boiled eggs. Great start to the day - eggs are the perfect food.

We have been on Keto diet for almost a year now, so I have close to 300 recipes. Will share this one which was posted on Tigerdroppings a while back.

Chicken Parmesan Florentine (Keto Friendly)

My recipe:

Chicken Parmesan Florentine should have a well seasoned portion of chicken, marinara sauce with lots of garlic, melted Parmesan and toasty hot Mozzarella Cheese, all resting on a bed of gently sautéed spinach.

This dish uses ground chicken instead of boneless, skinless chicken breast for this dish. Using ground chicken will more easily incorporate flavor into the meat portions. It also helps to yield a moister, more tender chicken portion.

Ingredients:

- 1 pound ground Chicken
- 4 teaspoons Garlic, minced
- 1 large Egg
- 2 cups Marinara Sauce, from the jar or your recipe
- 2 cups Mozzarella Cheese, shredded
- 2 cups Parmesan Cheese, shredded
- 14 ounces fresh baby Spinach
- 2 Tablespoons Olive Oil
- Salt to taste (about 1/4 teaspoon)
- Black Pepper to taste (about 1/4 teaspoon)
- 1 teaspoon Italian Herb Seasoning
- 1/4 teaspoon crushed Red Pepper


Directions:

1. Prepare the ground chicken by adding 2 teaspoons minced garlic, salt and black pepper to taste, 1 teaspoon Italian herb seasoning and 1/4 teaspoon crushed red pepper.
2. Then add the egg and 1/3 cup parmesan cheese

3. Mix the ingredients gently until evenly distributed. Over mixing will result in a tough patty.

4. Preheat a sauté pan to medium heat and add two Tablespoons of olive oil.

5. Using a suitably sized scoop, portion the seasoned chicken mixture into the preheated sauté pan. Alternately, you can remove enough of the seasoned chicken mixture with a large spoon to loosely form a 2-inch ball. Shape each portion into a 3-inch diameter, 1/2 inch thick patty and place it in the sauté pan.

6. Cook the chicken patties for approximately 3 minutes per side. The intent is to see a slight caramelization (crust) on the surface of the portion before turning it.

7. When the patties are fully cooked, remove and set them aside until needed. Do not remove the drippings or fond from the pan.

8. Add the fresh spinach to the hot pan along with 2 teaspoons of minced garlic. The spinach will deglaze the pan as it cooks. It will take only a few minutes to cook fresh spinach and it will quickly reduce in volume. The spinach will darken to a deep green color as it cooks. As soon as it is fully wilted, it is finished.

9. Portion the spinach into four oven proof dishes. Place two cooked chicken patties over the spinach in each dish to produce one portion/serving per dish.

10. Preheat the marinara sauce in the microwave before ladling it over the chicken. A suitable portion of sauce (to your preference) is ladled over each pair of cooked chicken portions. To keep the dish keto friendly, I don’t use a lot of sauce in my dish – maybe 2 Tablespoons per serving.

11. Lastly, the mozzarella cheese and the remainder of the parmesan are sprinkled over the sauce. Add as much cheese as you like. I use 3 Tablespoons mozzarella and 2 Tablespoons Parmesan.

12. The set ups go under a preheated broiler, about 4-6 inches under the broiler for as long as it takes to melt the cheese and brown it a little. Be certain to watch the dish carefully during this step as no one likes burnt cheese.

13. Serve with a salad.

Something i made the other day that I really like was a shrimp fettuccini with zucchini noodles.
Alfredo sauce has like 2 or 3 carbs in it.
Sauteed my shrimp. used the spiral thingy to make zucchini noodles. roasted the noodles first for about 12 minutes. drain the noodles b/c they are full of water. put the shrimp, noodles, alfredo sauce, little bit of rotel and top if off with a little parmesan cheese and stick it in the oven for a few minutes.


It's not hard to do low carb. just replace zucchini for spaghetti, cauliflower with potatoes/rice, using lettuce for your burgers, as well as for making some lettuce wraps with some asian flair for the meat, although you have to watch the asian sauces as many of them are full of sugar.Hughes makes a good sugar free ketchup and teriyaki sauce. On top of that, simply eating a meat and a green vegetable. Dinner is easy to do low carb. It's watching the carbs for lunch that's usually hard, especially if you go eat somewhere.

If you want to eat a burger or sandwich of some kind, make a "chaffle" and use that as the bun. Mix shredded mozzerella cheese and an egg and cook it on a waffle iron. They are pretty dang good.

Perhaps, but reducing carbs usually has deleterious side effects on my energy level & physical condition.

Having the extra fat for energy & calories helped mitigate the adverse side effects of cutting carbs.

Aren’t a thing on a very low carb diet. I’m taking less than 30 a day, which isn’t even that extreme.
