Hitting a plateau and think I want to do low carb. Is there anything you’ve found entree-wise that works besides straight meat?

Load up on cauliflower rice and make different "bowls." Sure that shite is trendy, but it works. I like to stir fry it with soy sauce (mix of light and the dark with mushroom), shaouxin wine, garlic and ginger. I also mix up THIS fried rice sauce and use it when I am ok with a small amount of carbs. Really this Woks of Life website is pretty fantastic.

I stir fry onions, bells and sliced carrots for one topping. Meat for another. I shred some lettuce or get arrugala for a third. Then I top it off with some sliced avacodo. Really you can mix and match however you want. It's open to doing something different each week so it doesn't become boring.



The other thing I do is make taco salads, just no tortillas or tortilla bowl.

I love to roast a spaghetti squash and pull out all of the "spaghetti", season it well, and then use it with a homemade meat sauce (or red sauce with meatballs).

The only thing you have to be careful of is that the sauce and the squash are both just "warm" and not hot when you combined them. If they are too hot, the squash continues to release water and it makes for a watery dish.

Meat with vegetables is far superior than straight meat.


I make casseroles to food prep for the week that follow the same basic principle. Some are Keto while others are just low carb.

Protein: Use tougher fatty cuts of meat chicken thighs, chuck roast, pork butt. A pressure cooker (instant pot) reduces the cook time considerably.

Vegetables: Frozen riced cauliflower is a good ingredient to bulk the dish up a bit while peppers and onions provide flavor and texture.

Sauce: Usually consists of either a Frontera brand skillet sauces, a low carb sauce like sweet babby ray's buffalo sauce, or a cream based sauce.

I started on Keto in January and dropped #20 from Jan-Feb without exercise. I then incorporated IF and lost another #10 in March. This month I'm down another 5 with OMAD.

I drink 3200-4400ml of water and eat 1500-1800 calories a day.

Albertson's does salmon filets with different marinades near the butcher for like $6 each. Bake at 350 for 18 min, can't get any easier

Good luck finding them though since I buy them all

All are delicious and help to keep you lean. Another staple of mine is collards with tasso diced up in it, so good.

Carbs in Rice

I've been going with cauliflower rice for about a year. I use it in gumbo, etouffee and all other meals I would normally eat rice.

Stir fry with chicken or beef and lots of veggies is pretty easy, just pay attention to any sauces you add. Some of them can have some carbs in them. Serve with cauliflower rice. Trader Joe's has the best cauliflower rice, but Green Giant is decent as well.

I mean, you could just watch your portion size when it comes to carbs like rice and pasta. A serving of pasta is pretty big or rice is pretty big.

Do you have a recipe for this? I know "real" dirty rice has gizzards/livers and whatnot, but if I'm just making something easy to pack for work, it doesn't seem necessary.

Want a cheeseburger? Make a cheeseburger salad, either with your favorite fast food burger or homemade.

Make tacos using cheese as shells.

Follow people on Instagram who post keto/low carb meals. Great way to get some inspiration.

Depending how low carb, you'll want to make your own seasoning blend as well. A taco bell seasoning packet for example has 15 carbs.

I do half ground pork, half ground beef, and liver if I have it. Sauté the trinity in the drippings from browning the meat (I keep it light on the bell pepper and celery though for dirty rice). Any cauliflower rice dish I make, I always simmer the cauliflower in chicken broth for 30 minutes or so, gets alotta the skunkiness out of it. I drain it after simmering, then add it to the meat/trinity mix. Add some pickled diced jalapenos and a little of the juice. Saute that a bit to get any excess moisture out and to let the cauliflower pick up some of the flavors. Season with salt/pepper/cayenne to taste.

When I did keto some of my favorites:

Taco salad. Cooked ground meat with seasoning and onions and bell peppers then ate on lettuce with cheese. The oils from the meat and cheese were enough for a salad "dressing".

Bacon and eggs with cheese. I made this a lot as it was simple and delicious. You can season the eggs differently each time to change it up.

Philly cheese steak and veggies. I would cook steak and peppers and onions then melt cheese on top and eat with a side of asparagus.

Hamburger with no buns. I would put lettuce, tomato, pickle, cheese on the burger and eat without a bun and cook a side for it.

I also did a lot of pastas and served over zoodles instead of noodles. A lot of people dont like zoodles cause they have an issue with them being watery or something but this is because they try to cook them. Best thing to do is to spiralize the zucchini with a cheap spiralizer into a colander and salt them to draw out the water. Then cook your dish and serve over them. The heat off the sauce will be enough to heat the zoodles to eating temperature.



I cheated and ate whatever I wanted on the weekends and that was the only way I could stick with doing the keto for a whole year. I weighed myself daily, so I watched my weight go down all week and spike back up monday morning, but i was always net negative.
