Leftover turkey ideas?

And before you say the following: Please - no gumbo, turkey sandwiches (po-boys) or turkey pot pie. Tired of eating that.

Still have turkey leftover since last Thurs? My #1 idea would be "put in garbage can".

Use the turkey meat in place of chicken and make turkey/noodle soup. If you did it right, you simmered down the turkey carcass with onion, carrots, celery, some bay leaves and whatever other seasonings you like to make some turkey stock and you can use that as the base.
I took all the leftover meat (one breast and a leg) and chopped it up and made turkey salad using diced onion, celery, sweet relish, chopped up salad olives, some minced green onion, a few boiled eggs chopped up and mayo.
Add salt and pepper to taste.

our routine is eat leftovers friday and then saturday or sunday we take whats left and make a turkey stew.

Freeze it. Then have turkey on a random day in March.

Do you have dressing and gravy frozen too? When I was in school my mom would send me back with a casserole made from leftover turkey, dressing, gravy and topped with Swiss cheese. I think she would supplement with cream of chicken or maybe gravy from a packet if we didn't have enough real gravy leftover.

This. Turkey noodle soup and turkey salad sandwiches are two of the best parts of Thanksgiving.

Mine was good and smokey so I sauteed some peppers, onion, garlic and sausage. Then threw in the carvings I had left which was about 1.5 lbs and added a can of tomatoes and chilis, a can of kidneys drained and 2.25 cups of chicken stock and a cup of rice.
Then I seasoned with Tony's and covered to simmer around 20-25 min stirring occasionally. Ended up being a good one pot Jambalaya type meal. I think next time I'll not put in chili flavored beans. FWIW, I realize it's not Jambalaya, but it's the closest dish I could think of but the family sure liked it.
