Left over corn and potatoes recipe

After crawfish boil last night I saved the left over corn, potatoes, mushrooms, and sausage. Any ideas for a recipe with these left overs?

Reheat them in the microwave and eat them?

You could always incorporate eggs in some way. Make an omelette or a scramble with the mushrooms and sausage and have the corn and potatoes on the side.

You could make a potato salad and a corn salad (add some peppers, onions, tomatoes, oil, vinegar). Or just a big green salad with potatoes and corn.
I wonder how crawfish boil mashed potatoes would work? Even if the potatoes were real spicy, the milk and butter would temper them a bit.
Or maybe using the corn and potatoes in a shepherd’s pie? You could toss the mushrooms and sausage in there too.

Maybe mash/chop it all up.

Add a fresh egg, shape into balls, roll in breadcrumbs and fry.

Voila... Crawfish Boil Balls!

Stole my idea

Was thinking of doing that. Like a garfish ball with the potato to hold it all together.

Also that would all make a good fettuccine.

Lol. I think it might be good. The reason it was on my mind is I have some leftover mashed potatoes from last night and I’ve been thinking on how to fry it up into something like gar balls.

I just made omelets for 3 of us with leftover potatoes, corn, sausage and crawfish. Just added a bit of onion, bell pepper, eggs and cheese in the omelet with grits on the side.

Crawfish boil soup. Many variations, heavy cream/butter variation taste the best.

I've done hash browns for breakfast with the potatoes.

With the corn I've cut it off the cob and skillet fried it to serve with roast or turkey.

Cajun Ninja's "After The Boil Soup" is one of my favorites and I never fail to make a big pot of it every spring. It freezes well and I can eat a nice crawfish dish late into the winter months that way.

make a good cheese sauce and mix it all in there together after cutting it up and decobbing the corn or keep it as a side

Potato salad with leftover crawfish boil potatoes is hard to beat.

The corn we use for a crawfish and corn dip since we peel any leftover tails.

I put all the leftover vegetables in a pan, (take the corn off the husk) brown whatever sausage is leftover, add that to the pan. Make a bechamel, pour it over the top, add some cheese to the top. Bake it till its heated through and the cheese is bubly.

Sometimes I put bacon if i have it on hand too.

I'll add some peeled crawfish or shrimp to the mix as well. If I add shrimp I blacken them first then add them if they not already boiled.

I will quarter the potatoes and fry them in a cast iron skillet with a couple of tablespoons of bacon grease. After the the potatoes brown I’ll add corn cut from the cob, mushrooms, onions, garlic along with leftover crawfish tails. Add pepper jack cheese on top and put it in the oven until the cheese melts.

I also make omelettes which has already been mentioned.
