I am in need of a good knife sharpener. Either electric or handheld.

What are you sharpening? Just getting kitchen knives to a usable condition or wanting to put a mirror edge on a skinning/fillet knife?

All the knives i use to cut up chicken and beef are all dull. The crappy little hand held that I have is not making the cut anymore....(pun intended).

Just random knives that you don't care (i.e. they're not the >$100, $$$$ knives) for home use?
Work sharp sharpener (electric)
personally we have one and every month I'll go through all the knives. We use and abuse the knives, ontop of that we have a ton so it usually the edge holds for a while.

Personally, I like your basic whetstones for sharpening knives.
I also use them for sharpening my chisels and plane blades and can get all my cutting blades razor sharp.
I also have an Irish Linen and Leather barbers strop that I use to finish all my edges off and really get them to a nice polished state.
I only use two 2 sided stones, one a typical gray whetstone in the 400/800 grit and a diamond stone in 1000/1500 grit.
I also use them for sharpening my chisels and plane blades and can get all my cutting blades razor sharp.

Oilstone:
Arkansas Hard->Arkansas Black->Arkansas Translucent->Horse leather strop. Could shave your face,
Also use smooth steel before each use and only have to use Black or Translucent every couple months (pretty hard use)

Worksharp is easy and I use it for kitchen knives, Fillet knives, hatchet, bladed tools, etc...

Chefs choice seconded. Had mine for 10+ years and still puts a razor edge in about 20 seconds. Just keep you edges relatively sharp where to don’t have to completely put a new edge on it every time. I sharpen my knives about once a month or two depending on use

I have a chefs choice electric sharpener (the 15 degree model) and its ok. It gets it sharp, but I have never ben able to get it as sharp as I would like.
I looked at and almost got the work sharp non motorized version. I didn't like how the motorized belt version only had 2 degree options and I wanted a little more control. I figure if I was going to get a nicer sharpener I'd like the flexibility of picking different angles for different blades.
Then I gravitated to a wicked edge versions because I liked how I could do both sides of the blade at the same time, has a blade guide so you can clamp it in the same spot every time for repeatability, all metal construction, and ability to do longer knives and scissors. I really didn't want to spend that much but buy once cry once. I wound up finding a Gen 3 pro kit at their old price (850) and splurged on that. The main draw to that one is the ease you can adjust the angle of both sides at the same time and exactly the same angle to get a great edge. I should get it tomorrow, happy birthday to me

I havent used a chefs choice but have a work sharp and havent looked back. I am not allowed to get the kitchen knives scalpel sharp after my daughter sliced open a finger and never felt a thing :) After 20+ yrs of whetstones beaver teeth lansky and every other fn sharpening gimmick known to man I luv me the work sharp.
pro tip - save an old 3000+ grit belt, to get a scalpel sharp edge - after the 3000 grit belt then rub bore paste on the old worn out belt to hone to a razor edge - its money dude

if you want something manual and not electric ive used tthe spyderco triangular sharpener on amazon. does a good job.
whetstone are awesome if you want to learn and spend some zen time sharpening.

I have the spyderco triangle setup - I gave it away after getting a worksharp. The spyderco works well but work sharp gets is sharper 10x faster, I do all the knives in the house 1x a month, my mothers, MIL, camp etc

For inexpensive knives I use the worksharp. I've gone through a lot of sharpeners, and I like that one the best for inexpensive knives. I would never put any knife of significant value in it though.

good to know. i like my stones but sometimes i just want quick sharpen, i might have to look into that.
