What have you purchased/acquired that has been a game changer for your kitchen?
For me, it’s this
Kitchen Aid oil dispenser. I got it a few months ago based off of a Facebook ad, and I use it almost every time I cook now.

A hand crank cheese grater, no more living in fear of cutting off the tip of my finger on the grater of death. We buy block cheese and use it often, have also used it to shred carrots, potatoes for hashbrowns, cucumbers for pickles, etc. Love this thing.

Yep, same for me. Whole slabs of prime steaks, whole boneless pork loins, chicken leg quarters etc.
I make my own sausages using pork butts and seal and freeze them.
Another small appliance I use a good bit is the hand held immersion blender when making some soups and sauces.

I have a hard time seeing how a freeze drier would be life changing for 95% of normal people

Emeril's French Door Air Fryer
I rarely use my oven now, unless it's something that requires more space. 90% of the time, this air fryer has enough space for me. The rotisserie is awesome, and I just love how fast it heats up for baking and the air fryer function is great. And it's big enough for a digiorno size frozen pizza.
But don't let the pic above fool you. You aint fitting a pan full of veggies under a chicken in there. Even just a 5lb chicken...it's nearly touching the bottom of the grease tray. As a workaround, I line the grease tray with clean foil and will put potatoes down there, but can't in the center because there isn't enough space with the chicken rotating.

Most everything already mentioned. I am pretty fond of my chamber vac. I fought with the smaller food saver types for years and tried out one of the larger 16" suck style off restaurant depot brands before putting out the money for a chamber vac. It is orders a magnitude better than anything else I have had. Being able to do liquid has been great and bag prices are really cheep. I went with a JVC vac 100.

For me, the most used thing in my kitchen is probably my electric kettle.

Vacuum sealer is a great answer, also a nice kitchen aid mixer- my wife uses it all the time to bake fresh bread and desserts

How long can you store something in the freezer when it is vac sealed?
