Yes sir. Pork and Sausage jambalayas are typically 2:1 combined meat to rice. Chicken only jambalayas are typically 3:1.
So with the 10 lbs of meat, it’s usually 75% pork and 25% sausage.

Rat, something ain’t right with the calculator, 2 1/2 pounds of rice and 6 1/2 pounds of meat ain’t going to fill a 5 gallon pot

with that being said, something that has not been brought up in this thread is that we call pots 5 gallon, 10 gallon, 20 gallon etc, but very few are actually that size and my "5 gallon" may actually be a 5.5 or 6 gallon and your "5 gallon" may be 4.5 gallons, very little standardization and a lot of the pots are from Mee maw and pawpaw if they are old or from Chyna if they are new

So the jamabalaya calculator that many swear by is incorrect then? Based on having a 5 gallon pot filled 95% Stadium Rat says that will serve 76 8oz servings. I am needing 75 6oz servings. You are saying I will need 7-8 gal of cooked jambalaya to make 75 6oz servings. That’s a pretty large discrepancy no?

I have a 15 gallon jambalaya pot. It's a perfect size for me. I can cook small amounts or large amounts with one pot. I can clean it easy. It's also easy to manhandle by myself.

Ok just a follow up to this thread. Made a small jambalaya this weekend as a trial run. The 6 oz cups they had were waayyy smaller than I had pictured. Kinda like a medicine cup that comes with cough syrup on steroids!! I had an 8 oz cup (clear and wider at top than bottom, like what you would see banana pudding served when catered) to compare. The jambalaya was a 2 cup rice, 1.5 lb meat (chicken and sausage), 1 quart stock, half pound vegetable seasoning blend jambalaya. Plus seasonings. This filled my 8 qt Magnalite almost half way once I folded and let sit for the final 15 min, so just under a gallon (not by much). This cooked amount yielded 12 8oz and 19 6oz cups, filled to capacity but not heaping! So for the 6 oz cups for 75 people/servings it would take a 4 gal cooked jamabalaya (hardly any to spare) and for the 8 oz cups a 6.5 gal cooked jambalaya with about a quart to spare. I cut the meat into smaller pieces than I would normally also. Always like dem experiments involving food me!!! Hope someone else can find this kinda useful. Thanks for everyone that gave input!!!
