Jambalaya Help

Ok I’ve always been good at cooking some stuff gumbo etc but jambalaya never had much experience. This weekend I’m planning on cooking a really big pot of it for my “yankee” friends lol and I need all the tips I can get. Don’t want them to think this Louisiana boy don’t know how to cook a good jambalaya lol. Also I’m in South Carolina so getting decent smoked sausage will be more challenging than if I was back home..thanks in advance.

Just curious what type of local sausages you can buy in your area of South Carolina?

I usually look for Bryan Smoky Hollow when I’m in another area. It’s not great, but at least I know it’s not gonna bring weird flavors to the party.

What kind of "really big pot" do you have?

You need a cast iron pot.

Been cooking jambalaya for a long time, just for family, never more than 12 servings, was hit and miss, downloaded the Jamb Calc about 3 years ago, it’s always spot on. Only thing I did was eliminated the dry seasonings and switched to Kim Leblanc’s seasoning and it very good.

I’m an idiot. Where can I download the jambalaya app, not finding it in App Store? Again, this is a really dumb question but would like to try it out though.

I want it to not have any tomato near it lol..don’t know what style that is but I’m not a fan of tomatoes in my jambalaya

Stay away from Hillshire Farms. They don’t taste right to me.

I wouldn’t buy it here, but Conecuh sausage is made in Alabama. Walmart should have it. Smithfield is made in the region you’re in. It would be my next choice.

Walmart carries a brand named Hydel's. When i'm in California and want good smoked sausage thats my best option. I would think its sold there as well. Its really pretty decent sausage.

Download the Jambalaya Calculater. Ratt did an excellent job on that app and its a great cooking tool.

My advice as a beginner would to be when you think you've browned it, brown it more. Cook the hell out them onions.
