Is there such a thing as Gumbo without rice?

I lived in LA for 7 years and I love a good gumbo, but my doctor wants me limiting carbs. Do I minimize how many times I eat a bowl, or just get it without the rice. I have never tried it without rice.

While gumbo with rice is heavenly, gumbo without rice can be pretty satisfying, too. Just make sure it's GOOD gumbo.

I think roux has a decent amount of carbs

I eat it all the time without rice. I’ve always been a “light on the rice” gumbo eater, as are many others. It all boils down to personal preference. If you lined up the Cajuns at a family reunion, you’d have a wide range of gumbo eating styles, ranging from lots of rice/minimal juice all the way to no rice at all, with stops In between at potato salad or baked sweet potatoes or (more recent) cauliflower rice.
Cauliflower rice doesn’t have remotely the same taste, but it is a decent alternative if you just need something else in your bowl.

My wife and son do not eat rice except for rice dressing or jambalaya.
They’ll eat gumbo, roast or any kind of beans, no rice.

I am 80-20 gumbo to rice anyway. I know some people are the reverse, but I don't like a lot of rice in it.
But yeah, sure you can eat it without it.
Keep in mind a cup of flour has 95g carbs so gumbo isn't necessarily low carb anyway. Lets say you have your standard 1cup:1cup roux with however many cups of stock you prefer for a small batch gumbo.. You're still getting a solid 15 carbs in a bowl without the rice.
I'd just limit how often I eat gumbo and then go light on the rice. Or like someone said, try cauli-rice.

I’ve been eating gumbo with no rice for awhile, I’m not big on cauliflower rice.

I like my gumbo pretty roux heavy so there’s def not 20 dinner sized bowls in it. Maybe appetizers bowls.

Whenever I order it in a restaurant I tell them to put the rice on the side.
Then you can eat as much or as little as you want.

I never put rice in beans or in gumbo. If it's seafood gumbo, I find that a couple extra pounds of crabmeat is a great substitute for the rice.

I prefer no rice and always am amazed seeing people eat theirs with so much rice, it’s like a stew. But hey, eat it how you want.

I prefer rice, though I'm not heavy on the rice. However, dipping some sweet potato into the gumbo is quite good. I don't put the whole thing in. I just get some on my spoon and then get gumbo on the spoon with it.
