The way I like my salmon cooked, I wouldn’t eat it. The way a lot of people eat it, sure. But I think most people overcook their salmon by a decent amount.

I won't eat anything that's seafood or with dairy that's been left out overnight like that.

I'm funny about my food. Got food poisoning once and now I check every expiration date when I go shopping. I don't even eat leftovers longer than two days.

I guess I'm an outlier, because I have no issue with eating something I left out overnight. IF it wasn't covered, probably wouldn't eat it, but otherwise yeah it doesn't bother me.

I'm shocked too, but from the other side. Every time I see one of these threads, I'm shocked by the number of people who risk eating it, or are seriously considering it.
I guess I get it if you're food insecure or grew up during the Great Depression and have that mentality about not wasting anything, but otherwise, I think you're weird.

What I'm thinking. It's a piece of salmon. I'm not risking getting very ill over 8 bucks of salmon.

The paranoia expressed on here about food that has been left sitting out overnight is remarkable. I routinely leave food sitting out, covered, overnight because it’s a lot easier to reheat it from room temperature the next day. I made some fried rice with chicken and shrimp on Thursday and could only finish half of it. I put plastic wrap over the dish and left it sitting on the counter and reheated it in the microwave the next evening. It had to be sitting out for a good 16 hours. It was fine. I was fine.
If it looks, smells, and tastes okay, it’s okay. Trust your nose. Don’t throw perfectly good food in the trash just because you’re a nervous Nellie. What a waste.

Science proves you’re wrong.
Sometimes the food will be fine.
Other times it won’t be.
That doesn’t mean it’s always safe every time.

I can tell when food has gone bad and cooked food that’s been sitting out for 2 hours hasn’t gone bad. The science says I’m right because I’ve conducted the experiment hundreds of times over the course of decades.
