Fwiw, I'm kinda like the guy you replied to. I must have a dumpster gut too because covered, left out over night then WYEI? Absolutely.

You got lucky. Rice left out will kill your arse dead dude, especially with shrimp and chicken in it. I mean I've left lunch on the counter for five or six hours but 16 hours with rice, shrimp and chicken? You gonna lose your a-hole baw

Food left out does not always have the bacteria present to grow in the amount of time that you left it out.
But if the bacteria is present, then yes, it can grow to an amount that will make you sick.
So you need to assume the bacteria is there to begin with in order to ensure safety.
Now, even if the bacteria DOES grow to an amount that will make you sick, it doesn’t mean YOUR body will get sick. Foodborne Bacteria generally affects newborns, elderly, pregnant women, people with autoimmune diseases, and people with kidney issues the most. It is believed most cases of foodborne illness get passed off as a stomach bug. In most cases, you may just feel odd for a day or not even at all. But…there are cases that can make you sick as well.
Eventually, spoilage microorganisms will grow and cause it to smell bad, grow mold, or look different. That’s nature’s way of warning you.
In the end, we all have personal choices and if you don’t mind the risk, then go for it. But the science proves the risk is increased when the food is left out.
Here are the facts:
(1) doesn’t mean the bacteria will grow
(2) doesn’t mean the bacteria will make you sick
(3) does mean that your chances of unsafe food increases
(4) foodborne illnes can be mild, severe, or even deadly
Goes back to the “momma left it on the stove all her life and she never got sick”. That may be true but it doesn’t mean she will never get sick.

I see no upside in eating anything left out overnight. Just not worth the risk. Eating seafood left out overnight, that’s on another level of gross.
