I know of some who use it in things like red beans or split pea soup, but that's a no-go for me since I find the ham too damn sweet for that purpose.

Like already mentioned, breakfast omelets, maybe a big oven baked quiche, add some along with some sliced boiled eggs in a bowl of salad.

How much leftover?

Add some to baked beans. Sweetness won’t hurt that.

bingo - easy to make a simple pie crust

mix up 6 eggs beaten well, some whole milk or dairy cream, cup of shredded cheese, can of rotel or some chopped tomatos. mix in a few tablespoons of italian or greek seasoning.

Put the diced or cubed ham down first, then the veggies, then pour the egg-milk-cheese mix over the top. 450 for 45.

I’d eat all of that.

I just eat the sliced ham portion out of a ziplock in the fridge until it’s gone. Wife takes the ham bone and makes white bean soup with it.

I like to cut it up into small pieces and mixing it in with some version of pasta and cheese.

I’ve never found it to be an issue.

Mom used to make a ham, white rice, and English pea casserole. It contained a tangy mayonnaise mixture as a liquid component and the spices used were mild.

You are getting a good many ideas already but I may be able to find the recipe (the looters/vandals of my other home got the handwritten cookbook Mom made, my copy, sis and Mom still have theirs).

Yes - always - Great northern beans are never cooked at my house without chunks of Ham in them.

No ham = no great northern beans that day.

Same with cornbread = No cornbread - no great northern beans

I love a good honey baked hambone in a pot of red beans. Delicious.
