Ideas for good crawfish boil side dishes

For about 30-40 people. I’m not boiling but would like to bring something good.
Low maintenance as reasonably possible.

Sandwich tray from the grocery store.
Sweets from the grocery store like petit fours, cookies, cupcakes. Those always seem to get snacked on after people eat the crawfish.

Definitely something sweet to compliment the salt and spice of the crawfish.

My wife made a banana pudding this past weekend that hit the spot after eating crawfish.

People are there to eat crawfish and all the random shite us southern folk toss in with it (see other thread lol). I wouldn't bring anything too heavy or filling, most will be waiting on the goods in the pot. I like a fruit tray with watermelon wedges among other things. Not too filling and nice on a hot humid crawfish day.

Pasta salad. Make it the night before and serve cold or at room temp.

A cold dip on ice is my favorite as a side at a boil (French onion, cowboy caviar, guac, shrimp dip)

We've bought a variety of ice cream bars loaded in an ice chest. Simple, but always welcomed and eaten. You can buy some of the minis and some of the regular sized. I love those little mini chocolate covered cones or mini ice cream sandwiches etc... Cute, not heavy, but enough dairy to soothe the pepper.

thinking about cold/sweet after hot/spicy:

pudding shots and/or jello shots

few gallons of daiquiris

Get a flat of Louisiana strawberries. Make some homemade whipped cream and refrigerate it the night before.

I stocked my side freezer entirely with an assortment of ice cream novelties for a Super Bowl party a dozen years ago. People still mention it to me. Choco-tacos (RIP) and root beer float popsicles won the night.

This would be perfect after a boil, imo.

We've done it for some other casual dinner parties as well. We load them in a basket and pass them around for some of those. What's been interesting is the people taking time to select what they want. It's almost like some of them haven't had an ice cream bar in years.

Man. You would think that but we boil every other weekend during the season and haven’t had a sandwich tray leftover often. And that’s with there being multiple of them to begin with.

I think when the crawfish settles people like the little sandwiches to round it out so they don’t feel the need to eat dinner once home.
