I need a good chili recipe

I have one that I use but I find it’s just ok. Not terrible, but not great either. What’s your best chili recipe.
This is chili as in bowl of chili, not hot dog chili.

Ingredients for Pot 1
* 2-3 lbs gr.chuck
* rolled sausage-Jimmy Dean
* Cumin Seed- 1 tsp
* Stick of margarine
* Salt- 1 tsp
* Pepper- sprinkle
* Chili Powder-3 oz
-Simmer for at least 1hr,
Ingredients for pot 2
* 3-Canned Tomatoes
* Chopped Red Onion
* 1-Chopped bell pepper,green
* garlic, 1 tsp
* 3-cans of pinto beans
* chopped parsley- handful
-bring to simmer, let it cook 1 hr
Then combine for the remaining half hour

I use Cajunate’s. It’s pretty solid - just search it. I found online.

Buy Chuck roast and have it chili ground. Buy flat steaks and cube them.
Brown off your meat with salt only.

Use suet. It makes a big difference.

I like to buy the two alarm chili kit and add a few extra ingredients including: corn, powder coco, minced ginger, chopped bell pepper, chopped onion and black beans.

I enjoyed trolling and wouldn’t take it back for a second. Not thrilled with the game but to have bama sec rant posters making serious responses to a question like that just makes life a little better. Good game. You guys left no doubt.

I make a huge batch of chili and freeze it, so you might want to adjust the amounts. This will make 18-20 servings.
It's a milder chili, I've made batches in the past that would make your eyebrows sweat. You can make it as hot as you want by adding more hot peppers or just some Cayenne.
Main ingredients:
5 lbs chuck - coarsely ground
3 lbs ground pork
3 boxes Pomi strained tomatoes (26.4 oz each) or 6 lbs fresh tomatoes (diced)
3-4 tbsp tomato paste
4 medium onions diced
2 heads (not cloves, the whole bulb) of garlic diced
1 bell pepper, diced
1 head of celery, diced
1 32 oz box Beef stock
2 32 oz boxes chicken stock
8 Bay leaves
3 small cans hot peppers (4 oz eah) or 5 fresh jalapeños
3 small cans mild peppers (4 oz each) or 5 frseh anaheims/Hatch peppers (roasted if you want to get fancy)
32-36 oz of beer - use whatever you want. I've done it with ales, IPAs and just good old Bud Light.
4 16 oz cans Kidney beans - optional
seasonings
(really you can do do this to taste). do these in the spice dumps, these are the total amounts for the entire recipe
2 cups chili powder
lots of fresh oregano or about 1/4 cup dried
1/2 cup paprika
6 tbsp cumin
onion powder - as much as you like
garlic powder - as much as you like
salt and pepper to taste
Brown meat, strain fat and set aside. Remove fat from chili pot.
Put diced Green peppers (also fresh jalapeños and anaheims if using instead of canned) , onions, garlic, celery and bay leaves in chili pot with some olive oil (enough to cover the bottom of the pot about 1/4 of an inch) and cook until soft and most of the liquid has evaporated.
Add canned peppers, tomatoes/paste to vegetables cook 15 minutes
Add seasonings
Add back meat
Add beef and chicken stock
Add first beer
cook for 4-5 hours.
Spice dumps each hour
Add last beer and beans 1 hour before chili is done
serve with fresh chives, cheese, chili cheese Fritos, limes, avocado, and sour cream.
really very easy and hard to screw up. freezes great and it's so easy to toss some back on the stove when you don't feel like cooking anything or going out. Also cheap, if you do it right it's under $2 per serving.
