How To Make Armadillo Eggs--With Pictures

Been posting this for over ten years. Long before the FDB was introduced. All previous posts don't have pics anymore, so here it is again. Smoke for as long as you like--until they are done OR bake in the oven for 60-75 minutes @ 350. Add your favorite BBQ sauce the last five minutes so the sugars will caramelize. Only five ingredients, but if done right, people will sing songs about them.

Hope y'all enjoy them!

Ingredients (5 eggs)

--2 lbs. Jimmy Dean Breakfast Sausage
--5 Jalapeno Peppers--seeded and veined
--1 Package Cream Cheese
--25-30 Strips of Bacon
--Sweet BBQ Sauce (I use Kraft or Sweet Baby Ray's)

I like to sub goat cheese with fresh herbs and garlic for the cream cheese.

I use Chicken thighs instead of breakfast sausage. It’s a hit every time!

I always thought Armadillo eggs were something different.
We mix the cream cheese and jimmy dean. Stuff that in a pepper, wrap it with a boneless skinless chicken thigh. Then wrap that with bacon.

if you're going to cook them on a grill , be prepared for lot's of fire. These things started a fire on my infrared gas grill that was not supposed to have flare ups.

What can I use other than breakfast sausage? Saw chicken thighs but what else?
