I could eat smothered okra & tomatoes weekly. Add chicken seasoned with Paul Prudhomme’s Seafood Magic and some Down Home Sausage or shrimp.

A friend grilled/sautéed some pods cut long ways and served with some kind of lemon yogurt sauce- it’s been a few years, but that was really good

My mom would boil it, plate it, salt pepper and pour vinegar on it and we would eat it just like that

I steamed some a few nights ago to go with some chicken I baked. When done to my liking I simply squeezed lemon juice over the pods, added a bit of olive oil and then seasoned them with salt and black pepper.

I do love it fried, but with cholesterol issues, I really have cut back on eating it like that and maybe do it once every 3-4 months for a treat with other fried vegetables like zucchini, eggplant, broccoli, green tomatoes and some fried dill pickle slices.

I could eat okra any way but raw.

My wife slices it up rather thin, adds some bacon grease to a cast iron skillet and sort of "blackens/smothers" it down. I can eat my weight in it. If I had a recipe I would share it.

Just this week we did some okra and tomatoes (frozen okra, canned tomatoes) and it was fantastic.

My dad taught me to slice it and stir fry it in a little oil with a few diced peppers and then sprinkle Jiffy mix over it. Cook until it's tender. I could eat a huge bowl of that stuff. Regular corn meal would work too, of course.

I like it most any way, boiled, broiled, smothered, in soups and stews. I like bhindi marsala too.

This really only works for fresh okra, but we typically slice it in half long ways, put a little olive oil on it with some salt and pepper and roast in the oven or air fry until crispy. It’s such a great snack

That’s my favorite way to cook okra is to bake it. It’s like crispy french fries to me.

I love to broil it.

Pick it small- no bigger than 3”.
Cut off the stem and toss in olive oil
Lay on a baking sheet and sprinkle with sea salt
Bake on 400*

Came to post this. I grew up with it battered and fried and love it that way, but broiling it is so freaking simple and good that I've never looked back.

I'll have to try the broiled. I usually just do a simple saute which to me is better than battered and fried.

I toss it in olive oil and seasonings, and roast it in my air fryer

I’ve tried that. It’s much better fried in oil than air fried.

Whatever you do, don't feed them raw to your dogs. They'll love them, but eventually okra-slime-diarrhea will be all over the house. Ask me how I know.

This is my mom's method and how I prep okra for freezing. When I want some I'll take a bag out of the freezer, let it thaw, and brown tasso or sausage or sausage and tasso, or chunks of deboned chicken breast and sausage or tasso.. or leftover barbeque and add the prepped okra. you can add shrimp or any other protein you want to combine with it. I like smoked, salt pork.

Directions for smothered okra

3 quarts cleaned and cut in 1/2” rounds, long horn okra
¼ cup vegetable oil
1 medium onion, diced
½ of large bell pepper, diced
½ of large jalapeno pepper seeded and cut in rings
1 can original Rotel tomatoes (drain and reserve juice)
Preheat oven to 350 degrees.
Put ¼ cup vegetable oil in (oven safe) dutch oven.
Add cleaned and cut okra. Bake stirring gently, occasionally until okra loses its slime. Push okra to one side and add onion, bell pepper, jalapeno and drained rotel tomatoes. After seasonings are wilted, mix okra and seasonings and set aside until completely cooled.

Bag in freezer bags or vacuum sealed bags and add the reserved RoTel juice to the bags to moisten the okra and freeze til ready to use.
