Is there any restaurant you would want 3 hours to be seated for? To me personally, I wouldnt wait over an hour for the best BBQ when best and great is not that different.

you can order a full brisket without having to wait, just have to do it a few weeks before.

You call and order a brisket a few weeks ahead of time.

What does Aaron charge for a whole brisket, I would guess about $20/lb, so a 17lb whole packer probably cooks down to about 10lbs when trimmed and cooked. So we talking a $200 hunk of meat?

Sounds like you have to wait a few weeks.

I've heard the Bellagio buffet in Vegas is the sheet. Each time I've attempted to eat there it's over an hour wait. I still haven't tried it, so no, I won't wait three hours for food.

Looks like he added a ton more to the preorder site than when I did it.

I did it when I was there because I heard the same thing, it was the same garbage cruise buffet food as everywhere else. I didn't wait though, it wasn't very packed that I remember.

Those prices are ridiculous on the pre order stuff, $110 for 4-5lb of brisket, $19/lb for pulled pork? What ever happened to BBQ being cheap cuts turned into good food, at low cost? Michael Symon has a place up in Cleveland with similar pricing. If you like BBQ buy a smoker and learn to do it yourself.

I'm not waiting more than 30 mins. There are plenty of good places to eat in Bham now. You don't have to wait anymore.

I don't wait to eat. If a restaurant doesn't have a seat available when I arrive, I go somewhere else.

It's not cheap, it was about that price for a full brisket when I bought one when that is all you could preorder.

If you try to buy a single raw prime brisket from the same farm as him for your own BBQ, it's about $120 for a 12-14 lbs packer.

I'll wait a couple hours for crawfish at Cajun Claws, but I'm usually just sitting in the bar with friends and family drinking, so it doesn't really bother me

ETA: that is pretty much the only place that I wait to eat at though

people started to demand it, the supply of really good BBQ is low, and the price goes up. Not to mention a good BBQ restaurant is a pain in the arse to run

It is like chicken wings. Use to be dirt cheap until the boom and now you are better off buying legs.

People wait to be seated at Galatoire's Restaurant for hours.

It's not uncommon.
