Totally agree. I went to the original Mamacita's in Kerrville TX many years ago. We got there early on a Sunday morning and waited in line for 1 1/2 hours. That was because we beat the church crowd. The food was something to write home about. Fantastic.
Anyway, I have been to 3 or 4 of the chain store Mamacita's and have no desire to ever go back. I have a hole in the wall Mexican place that is half the price with much better food than the Mamacita's expansion places. I'm sure they make more money but the Mamacita's name is not as highly thought of as it once was.

i'm no chefrob, meridiandog or niknik but i've won cash before with my brisket and i 100% agree there's no way its worth that kind of wait.
i learned from Craig Sharry and Bill Cannon who have both won the Houston Livestock BBQ Grand Master championship multiple times (Craig makes some damn good pepper jelly).
nice smoke ring, meridian. shake the haters who think bbq is 'magic' and clearly franklin's must be the Food Of The Gods and worth every second of a 3 hour wait.

I don't think there are many (if any) people on this forum that have said Franklin's bbq is worth a 3 hour wait. It's not. Is it the best? Yes. But there are other places that are about as good with much shorter wait times.

That's great. I have a similar story. My mom has made etouffee since the 60's, and I've only been doing serious cooking for about a decade, but I learned to make a much better etouffee than she cooks. She puts beef bouillon in her seafood etouffee!

Hell yeah, best damn Mexican food I have ever had. And I love and have eaten a lot of Mexican food. It was worth the wait and I was with a group of cool people from Weatherford that I drove down with so it seemed like 10 minutes.
I don't know if it was pre or post expansion. It would have been between 1988 and 1990.
I loved both the salsa and tortillas. We were right by one of the tortilla cooker machines and ate a lot of them. First time I ever saw people just dip the tortilla in the salsa. Damn good.
The only tortilla I had in my lifetime that was better, was tortillas a friend of mine's mom from Honduras made from scratch. Tortillas and butter. Mmmm, Mmmmm, Mmmm.

Not to derail the thread but I love that area of Texas. I remember driving into Kerrville from Weatherford at night. There was absolutely nothing - pitch black. Then you come over the last hill into Kerrville and it was like flying into Vegas at night. Awesome sight and experience.
I was also fortunate enough to attend the New Braunfels Wurstfest. Very similar to mardi gras without the beads and a bunch of leprechauns running around. Great food, beer and people.

Light bulbs, black high temp spray paint for my old BBQ grill, white socks, a pair of rubber sandles for use shower, while in Honduras, Underarm deoberant, Gummy bear vitamin C, Tylenol, Fishing stuff for the grandkids, a TV antenna once that I took back, potato chips, which I no longer eat, Jimmy Bean pork sausage in the plastic tube, party ham, a box of screws, Quaker original Oatmeal, potting soil, water soluble fertilizer, you get the idea. Happy to help your need for an opinion on what to buy at Walmart
Oh, they make great apple fritters, but they may be off my food list. The jury is still out, but they wreck my self imposed diet and I may give up donut pastries forever. I have made difficult decisions many times over the course of my life and this is one of them.

We probably did wait longer than necessary. If my memory is correct, it was one of the chicks from Weatherford who came up with the idea to go there. She was pretty emphatic about getting there early to beat the church crowd. We definitely did that.
We got there well before they opened. There was a decent gathering out front when they did open. Very soon after the place was freaking packed.

It's freaking lunch bro, not auburn LSU. It's one thing to tailgate and drink 6 saturdays a years. It's another to own a restaurant and think that people want to do that crap 365 or whatever days a year. Tuesday in August, yeah that's real 'cool' to do.
I'm not Uber experienced, but I worked in restaurants over 8 years through HS and college and I've been involved in the industry for over 20 now. Look I hope this guys thing works out, in just saying I've seen it over and over some jackwagon cook gets a hardon because people love his one dish and think they'll take it up the A for it forever. It doesn't last, he cuts corners, and goes out of business because he did something shady.
This is in Austin, it's one of the top 5 tech places in the USA. There's no reason to have people wait for 3-6 hours for lunch. It's stupid. There's 20 ways to figure out a way online to give people set times to arrive.

He doesn't think people want to stand in line for hours to eat at his restaurant. People do it. January, February, July or August there is a line to eat his food.

Didn't sound like it earlier. It was you that accused him of not paying his taxes and treating customers like crap, was it not?
The link I posted earlier about how being in line is similar to tailgating was from 2011 or 2012. M-Dog said Franklin has been in business since 2009. Seems like the shine has not worn off his business structure.

People do it. He doesn't force anybody to wait in line. It is a concept that you cannot understand which makes perfect sense. I'm sure everybody not willing to stand in line is the same way.
The line thing is treated as an event by the people who do it. A lady I used to work with did it on a Saturday. She was absolutely giddy at work on Monday.
Her and her group bought the $5 Dick's sporting Goods chairs, cheap Frisbees and nerf football(s). They also brought umbrellas - don't know if they bought them or already had them or if it was for the sun or bad weather.
They had two coolers with mixed drinks and beer. They played Frisbee and tossed the football(s) with other people in line. Met people, traded beers, made people drinks, took pictures with other people crazy enough to stand in line - most from out of state, etc.
When they got close enough they left everything they had brought except the coolers and maybe the umbrellas. She said as they were leaving she heard someone ask another group if they were going to take their chairs. The group who had been using them said they weren't theirs that someone else had left them. So the people asking sat in the chairs to rest before being able to go in.
To me, and I have never been to Franklin's, that is what it is about - the experience. Having fun, tailgating, meeting people who are also happy to be there and partying. Some people may really just be there to eat the freaking brisket, but if this chick didn't get any food at all, she still would have been happy as hell to have done it and still want to go back to do it again. Actually, now that I think about it, they may not have gotten the full menu of food. She never mentioned it.
She did say they have counters that come out and start counting people in line. When they get to a certain # they tell the people behind them that there probably won't be any brisket left. Fifteen to 30 minutes later they come out and count again to tell people behind the # that they will be out of another food or won't be served at all.
Like I said I have never been to Franklin's. Probably never will. I can see both sides of the story - people thinking their time and life are too valuable to stand in line for food and those that relish standing in line to soak up the atmosphere. The bottom line is a lot of people are willing to do the latter and have no problem with it at all. More power to them.

You certainly aren't my father. He went across the channel at D-day and walked across Europe. He almost froze at a gathering they called the "Battle of the Bulge" and ended up at the gates of Auschwitz the day the war ended.
