Bourdain is wrong........The reason for mayonnaise, is to create a fat layer between the juicy burger and the bun. I hate when places put the mayo on the top bun only. Mayo, not only tastes great, was very specific in the invention of the burger. No body wants a bun that is soaked with burger grease.

WTF is he (Bourdain) talking about?

Never have I ever experienced this when eating a hamburger with any bun. White bread, sure, but never with a bun.

This just seems like another attempt for him to be contrarian to a popular trend.

Personally, I prefer the pain de mie style burger bun that was popular during the burger revival of the early 2000s. It's relatively easy to produce, making it a good choice for burger places that wanted to bake their own buns.

Then you haven't eaten many burgers. I absolutely have, and with brioche in particular. Now, I still lean toward them for certain reasons, but this is definitely an issue.

Might have been mentioned, but Publix has a surprisingly good hamburger bun in that it doesn't turn to mush when the grease hits it

We use Martin's Potato Rolls for just about everything - burgers, sloppy joes, pulled pork bbq sandwiches.

I don't know what kind of brioche buns you've been using, but I've been doing smashburgers on brioche for years and have never had a problem.

The ones I've encountered that have had this issue are those shitty buns that Our Mom's uses and Fat Cow used to use.

Sara Lee Artesano Bakery Buns

The Sara Lee Artesano line is the best mass store bought brand out there.

The entire Martin's line of buns and breads are excellent. I don't see them in Kroger, but Publix has them.

They work for me as well, but always looking for a better bun.

I have found things hold together better when not placing the meat directly on the bottom bun.

As a matter of fact, I've eaten enough hamburgers to figure out that a couple leaves of lettuce between the burger patty and the bottom bun create the perfect moisture barrier to prevent the soggy deterioration you have experienced.
