Let's say you were going to make your own Filet-O-Fish, what species? Cod? Haddock? Other?

Thin sliced, crispy fried catfish on French Bread with mayo, lettuce, tomato, pickles and several shots of hot sauce of choice for the win.

catfish for a sandwich for me.

I think the most likely choice to replicate the sandwich would be either of those you put forward.

For a thick square portion of white meat fish then Cod would certainly be the closest to McD's and probably what they use. Locally redfish or drum would work well.

Speckled trout
I don't know what it is about trout that makes them fry up so nice, I can't hardly eat fried catfish anymore.

While I love speckled trout, I do not fish for them very often. I was thinking, and should have been more clear, "fish I can find at Sam's/Kroger/Albertson's".

McDonalds uses Pollock.
I love fried catfish on a bun with Mayo, diced onion, and lettuce. That’s what I would use if I wanted to make one.

Normally I would say Sacalait, but since I fish almost all saltwater these days I'll say Speckled Trout.

Get haddock from Whole Foods. It comes in a nice rectangular filet that you can cut into a filet o fish sized square easily. Beer batter that shite and fry it up.
I started a thread last lent looking for haddock in NOLA and that’s where I found it. Also made homemade fries and tartar sauce. (Don’t skip the malt vinegar either)
