As said McDonald’s uses Pollock and so does every other fast food that I know of.

You can usually get frozen cod, haddock, etc. at the grocery store. That’s your best bet going that route.

I’d be curious if anyone had a good Fast food fish fry type of recipe?

I'd start with cod. Steamed bun. Cheese. TS

McD's used Cod in the 70's then they switched to pollock.

Good question. I think I would choose a thicker catfish filet and cut into a square. Brine overnight with pickle juice. Batter w a normal Louisiana beer batter with half the beer. Dukes based tarter sauce on a brioche hamburger bun.

Pittsburgh (where I'm from) is known for their fish sandwiches. Most places use cod, so that's my pick.
