I love skin. With that said, tuna, swordfish and catfish skins are a whole lot of nope.

Ok clearly i am missing something. I am picking up some skin on catfish from castnet for my son's christening... I am going to ask them how they do it.

That said, I acknowledge that the place I go for this must do something to the skin before selling it to me based on the reactions here. It tastes literally nothing like any of you are describing. Just gives it some extra flavor and texture. Not hard or rubber like at all.

They pull the skin off and leave the thin, gray membrane on would be my guess. Which is more akin to what's left on a scaled bream or perch. Definitely not the "skin" of a catfish. I think you're just talking about regular ole whole fried cats. And if so they are hard to beat. Especially the little fiddlers.

Ok so mystery solved. I am referring to the "silver skin". You commonly see it on catfish nuggets but i am having them leave it on my filets.
