Flank vs. Skirt steak fajitas?

What do you prefer to grill for your fajitas? I’m normally a flank steak guy but considering switching for tonight’s fajita cook.

I'm also interested in a good quality beef for fajitas. Seems like the flank I use is always tough and "sinewy."

I usually only do flank because I can never find skirt. I usually sous vide the flank for about 3 hours and then cut it up and throw it in a hot cast iron pan to sear it.

Meat tenderizer in the marinade then Beat the shite out of it with a meat mallet before grilling, then slice thin, against the grain. Cheap cuts that will be "restaurant tender".

Flat Iron... especially if you prefer medium rare steak. More flavorful, tender, moist & forgiving compared to flank & skirt. Try it!

At the price places charge for fajita meat, you might as well just buy filet and enjoy it.

Whatever I bought from Valdez Mkt on Old Hammond was excellent. The chicken meat was good too.

I’ve never had luck cooking beef fajitas, no matter how much I spend on meat.

Which sucks because places like lupe tortilla that have excellent fajitas it is pretty much my favorite meal.
