What do you prefer to grill for your fajitas? I’m normally a flank steak guy but considering switching for tonight’s fajita cook.

I'm also interested in a good quality beef for fajitas. Seems like the flank I use is always tough and "sinewy."

I usually only do flank because I can never find skirt. I usually sous vide the flank for about 3 hours and then cut it up and throw it in a hot cast iron pan to sear it.

Outside skirt is what you want.

What's the difference between the two...and what do most restaurants use...

Agreed, outside skirt is my go to.

Meat tenderizer in the marinade then Beat the shite out of it with a meat mallet before grilling, then slice thin, against the grain. Cheap cuts that will be "restaurant tender".

Flat Iron... especially if you prefer medium rare steak. More flavorful, tender, moist & forgiving compared to flank & skirt. Try it!

Doesn’t Costco have pre seasoned skirt steak for tacos?

Skirt if you can find it easily. Otherwise flank.

Picked up 3 skirts from Alexander’s Market and they’re marinating now. I’ll post pics in little bit.

At the price places charge for fajita meat, you might as well just buy filet and enjoy it.

Whatever I bought from Valdez Mkt on Old Hammond was excellent. The chicken meat was good too.

I’ve never had luck cooking beef fajitas, no matter how much I spend on meat.
Which sucks because places like lupe tortilla that have excellent fajitas it is pretty much my favorite meal.
