The bearnaise sauce is delicious, but I'm sure Galatoire's could accommodate your wishes to have some Blue Plate.

Go to Denmark and get your fries with a king sized glob of mayo. In Copenhagen for business. They looked at like I was a freak for not trying it. I was a good American and told them no thanks, with no criticism of their fondness for about a half cup of mayo with their fries.

You should have tried it. That's the way it's done in most of Northern Europe. I actually like it.

I dated a Swedish girl in culinary school, that dipped her fries first in aioli, then in ketchup. It wasn't bad but I prefer my fried potatoes au naturale with just a liberal amount of salt.

That is how I ate them growing. I stopped when my mother ran over my foot with a lawnmower. When they took my shoe off the top of my foot looked like scrambled eggs with ketchup. Never again.

fries are not an end to themselves in general.

i like to mix sirachi and mayo and dip my fries in that. i like dipping fries in blue cheese dip, ranch dip, chickfila sauce, remoulade, buffalo sauce, white gravy, etc etc.

whats wrong with having a variety of things to dip your fries in? variety is the spice of life andif all you ever do is put ketchup out of a foil packet on your fries you're missing out.

I wouldn't go that far; a good aioli is an outstanding complement to fries.

However, American ketchup is a garbage-tier condiment. I can't think of anything other than cocktail sauce that would not be improved by replacing ketchup with something else or omitting it entirely.
