Fish taco questions

I want to start making these regularly. Seems I have had them multiple ways. What's your:

This is our Fish Taco Seasoning.
Dry fillet with a paper towel. Dust the raw fillets with seasoning and sauté in butter until a slight crust forms, turn and do the other side. Serve on soft flour tortilla with lettuce and tomato, or your greens or slaw.

2 Tablespoons Garlic Powder
2 Tablespoons Chili Powder
2 Tablespoons Cumin
1 Tablespoon Smoked Paprika
1/2 teaspoon Cayenne Pepper
1 teaspoon Cinnamon
1/2 teaspoon Red Pepper flakes
1/2 teaspoon Salt
1/2 teaspoon Black Pepper

I've done something similar, but dredged the filets through butter, then rolled around in the seasoning and cooked in the air fryer.

Fried with cilantro added to cole slaw and chick fil a sauce.

I make fish tacos various ways.
1. Haddock (redfish is close to $30/lb here so eff that)
2. Marinade w/ lime, olive oil, salt w/ a bit of water
3. Bake the haddock
4. Make a chipotle mayo
5. add chopped tomatoes (baked is preferable), corn (I prefer corn over cabbage) and cilantro
1. Salmon, Grilled over charcoal
2. Everything else is the same as above
Asian style
1. Salmon
2. Marinade w/ lime, soy, olive oil w/ a bit of water
3. Make a ginger/lime mayo
4. add fresh mint, basil and cilantro. Corn also works with this
1. Tuna
Same as the asian style above. Sear tuna and slice.
I will aslo do al pastor style fish tacos using haddock

make a cajun sauce with sour cream, lime, seasoning, etc
mix the sauce with the slaw until cole slaw is freaking delicious

The last time I made them, I had redfish and sheepshead, "blackened" in the air fryer, and topped with cole slaw from Publix and a mayo/Siriacha/lime/pickle relish sauce.

I might as well say this. Sometimes, I cook fish sticks in the oven and make my tacos with them. Make a sour cream, horseradish and cabbage slaw with just a little sweetness added, Uh ... really tasty ... cheap, too.

deep fried firm white fish. i like cod for this a lot. 3 oz portion or so. Battered and coated with panko.
simple hand sized flour tortilla
garlic cilantro aioli onto the tortilla
picked red onions thin slice and matchstick radish
fresh cilantro and squeeze of lime on top
i basically stole this from a popular Mexican restaurant i frequented often.

I'll just throw some mexican blend seasoning on some trout and blacken it in a ripping hot skillet.
Add in your favorite toppings, hot sauce and cream sauce and you're good to go

I do blackened on the blackstone.
I make a sorta cream coal slaw. sour cream, lime, salt and pepper, a little mayo and shredded cabbage
I also make a mango salsa. diced mangos, tomatoes, red onions, red bell pepper, toss in olive oil, cummin, chili powder, garlic powder s&p mostly what I put in the fish.
