I have to cook for a large event and need to make appetizers/finger foods.
luckily, it doesn't have to be ready all at once, just slowly feed people throughout the day. Preference would be something grilled or on the blackstone. In the past, we have done:
sausage - kind of boring on it's own
grilled cheese - cut into halves
cheeseburgers sliders
jalepeno poppers - maybe too labor intensive
open to recs, thank you

Koreans have a dish called Sotteok Sotteok, which is chewy rice cakes and sausage grilled and then coated with a sweet-and-spicy sauce. If you have an Asian grocer near you, you should be able to find the rice cakes and the ingredients for the sauce.

A recipe I got from the Marlboro! cookbook. I have no idea how I ended up with it, since I don't smoke, but it's a crowd pleaser you can prep beforehand and rotate cooking it as people plow through it, straight from the pan you put on the grill.
Basically, onions, peppers, and sausage cooked in sweet and sour + Tabasco sauce in a disposable aluminum pan. Eat it with toothpicks. Never, ever, leftovers.

Cheese ball/cream cheese & pepper jelly. We had one with shrimp over the weekend and it was delicious.

Smoked cream cheese
Extremely easy and everyone loves it. I typically do several with different rubs and always have one with everything bagel seasoning.

As many 32 oz bags of Great Value frozen meatballs that you think you’ll need. As many cans of crème of mushroom soup and small bottles of your favorite bbq sauce.
Dump one bag of meatballs on black stone and cook until thawed then dump one can of soup and one bottle of sauce then flip and stir until blended well and hot. Scoop it all into a party platter and place a box of toothpicks next to it. Repeat as needed.

If you're looking to grill, grilled quesadillas. Lots of options and prep the ingredients in advance.
Easy to eat without a fork or plate.
If you want to get fancy, set up bowls of sour cream and salsa.

Wrap some jumbo shrimp and smoked gouda with some bacon cooked halfway then smoke them low for about 20 mins, then at last 5 mins on smoker dab a little sweet bbq sauce on them. Trust me, they'll be gone fast.

Not what you’re asking for but consider the Crawfish Dip I posted in the Recipe Book thread served in phyllo cups.
