Normally I like just grilled or panned fish. Every one in a while I'll go out and get a fish dish prepared in a way or topped with a sauce that makes it stand out.
My favorite used to be the Andoulle crusted drum at Emeril's but it's but on any of his menus anymore. I also really like the redfish with Ocean sauce at Adolfos on Frenchman.
Today at brunch I had the pecan crusted gulf fish at Commander's and it was really good and I've never tried crusting the fish in pecan.

As I type I realize I haven't been to Peche or GW Fins in years.
They had great options.
Just looking for more fish dishes to try or to diy.

All those sound amazing but are out of my league.

I love seafood so here are some that come to mind:
Stuffed Flounder - most recently ate at Original Oyster House, Gulf Shores
Grilled Red Fish topped with andouille, lump crab, and alligator - Red Fish Grill
Pontchartrain - Parrains

Carrabba's used to bread trout, grill it, and top with lemon butter. Simple dish but was well done.

If including sandwiches:
Grilled Grouper - not too long ago at Salt Shack, Tampa, FL
Grilled YFT - Southside Cafe, Slidell

The Extravaganza at Poor Boy's Riverside Inn in Lafayette.

Red Fish stuffed with crab meat stuffing, then topped with crawfish, crab meat and mushrooms sautéed in sweet cream butter.

Can also get it in flounder, tilapia or catfish.

Any special at GW Fins. I think one of the best I ever had was Amberjack many moons ago. That was before I knew what Chilean sea bass was though.
I had the snapper dish at The Back Porch in Destin a few weeks back. It was very good.

Home cooked- I used to grill snapper on the scale and make a shrimp or crawfish sauce (butter, onions, garlic, crawfish/shrimp) for topping. That was some of the best dishes ever.

Adding one. Wife and I went to Rip’s on the lake this evening in Mandeville. She had blackened redfish Lacombe and i had Redfish Venice. Both dishes were excellent. Had the crab cakes appetizer as well and excellent as well.

I once had a blackened redfish on bun topped with a crab meat sauce at The Munch Factory. Was a special and i often think of it. But I rarely cook redfish at home and when I do I don't make it into a sandwich. But it may have been a top five all time sandwich. And not in menu was a one time special.

However, recently had the pecan crusted fried redfish at Superior Seafood and it was very good
Hitting up Brigtsen's this week and will see what's there

I had never had a piece of tile. The wife and I were on St. Simons. The restaurant was Georgia sea grill. White table cloths and a pianist providing background music.

We didn't have reservations and were seated at the bar. I generally like sea bass mahi.

The bartender recommended the tile blackened, cheese grits and a vegetable "medley". That piece of fish was without a doubt the best piece of fish I have ever eaten.

Talked to a friend later that is a Cordon Bleu chef and he said tile is so delicious because it feeds on crabs. In the mud.

Everything they have is awesome. PBRI is my all time favorite. If you've never been, do yourself a favor and make the drive.

Anyone remember the whole fish baked in salt at Ghengis Khan? I may have butchered the spelling of the name!

Whole fried snapper with a good squeeze of lime and a dab of some kind of spicy sauce on it. Preferably with a very cold beer and a view of the water.
