Favorite kitchen chef’s knife around $100

Want to get a decent chefs knife, looks like the base SHUN is about 150.

What is everyone using?

If you want Japanese then look on chefknivestogo and you can find a shite ton of stuff for right around and under $100.

I got one of the better Henckels. I like it. Very sharp and I like the heavier weight. Global are great knives but not as "pretty" as Shun or Henckel. That Victorinox will get it done too.

Shun's are pretty overpriced for what they are. I work in a professional kitchen and they are considered somewhat of a joke.

This is what I use every day. Wish it held an edge just a little longer than it does but I use it a lot more than the average home cook.

Other people in my kitchen use Dalstrong, globals, henckles, wustoffs, and of course the victronox and dexter blades.

I have a lot of different ones but I grab a Global or Dexter Russell more than the others.

Dexter Russell’s are cheap and I have I think three different sizes and love the 10”. It’s a beast.

I used a Wusthof Grand Prix II for several years. It's a good knife but just couldn't get as sharp as I wanted.

A few months ago, after waayy too much research, I went the Japanese route and snagged a Dalstrong Shogun Series X Shogun knife. This thing is a godsend. Incredibly sharp, great feel....I can just rip through dinner prep in no time using this knife.

i have a 12" one that took my finger off slicing a brisket. those things are incredibly sharp out the package.

And it’s $40.00.


Add this one that I use everyday for about $18.00. This is a great knife.

I bought a Dalstrong on Prime day, assuming it would turn out to be a scam, but it's actually been a great knife

From poking around the internet, seems like they're thought of as at least a decent option

My first "real" knives were a set of 3 Globals. Lasted years and did everything I needed. Not expensive.

I have the 10" Dexter Russel and an 8" Global G2. The Global knife has a great blade but the handle is too small for me and my hand cramps after using it for a short time. My Dexter Russel is an older model that has a big rubber handle. Most comfortable knife handle I have ever used.
I recently picked up a Misen after seeing a post about it by GrisGris but I haven't used it enough yet to have a solid opinion.
