The victoronix is very light. Decent edge, just far lighter than one would expect. I found it disconcerting at first, but have adapted.

That price point is enticing but I'm with you....I want my knife to do the work and you rarely get that kind of heft from a knife without spending at least what the OP is looking to spend. If you speed chop a lot, the weight of the knife becomes very important, imo.

only if you don't take care of them. As long as you clean, hone and sharpen the blade on a regular basis, the knife will continue to do the work. I do agree with you on the weight of the knife though; you just don't NEED to spend 100-150 for a sharp knife.

OP, here's some more unsolicited knife advice: make sure to use a cutting board that's not made of glass or any hard material. Bamboo or nsf plastic only. And NEVER put your knives in the dishwasher.

Cooks Illustrated reported a few years ago that Victorinox might limit the popular model to commercial sales only and sell a less liked model to retail consumers.

Not sure if that plan was scrapped or not, but I went ahead and bought an extra that is still in the box. The original is still working great and gets used almost daily.

You don't NEED to do a lot of things, but better quality steel will make a better cutting knife.

Mf’n this.

I’m using it everyday. For a few more bucks you’ve got one of the best knives on earth. The weight is perfect.

I’m not above perusing ebay for used Wusthof’s. You can steal some nice blades cheap if you’re patient.
