Started making my own with pork belly slabs from Costco last year. Haven't looked back. Always have vacuum packs of it in the fridge/freezer.

Agreed.
I probably piss some people off when buying bacon, but I have found you have to pick through several packs to find one that is going to actually be worth a damn when cooked.

The Wright Brand thick cut 4 lb. packs at Sam's are $20 right now I believe. I have been buying those for several years. Cooks up nicely in the oven @ 400 till the crispyness you like.
Keeps in the freezer after cooked for a long time in ziplock bags also. Lay it on some foil @ 275 till it starts to sweat (or sizzle if you like it crispier) and it is good as new.

Very much a regional brand, but Beeler’s out of Iowa is the best bacon I’ve ever had. Their big seller is hickory smoked, but they have an applewood that is perfect
